- What better way to learn about vinegar than to take shots of it? Join Chris and Rawlston in their home kitchens as they try cooking each other's recipes with different vinegars. Rawlston's challenge for Chris is Escovitch, a Caribbean dish of fried fish topped with a spicy vinegar sauce and pickled vegetables. Chris's challenge for Rawlston is braised chicken thighs, of course featuring a healthy dose of vinegar.

Editing for this video is very subpar. Music is overpowering, voice levels uneven, text displaying for too short a time..

i think maybe the sound levels were off on a lot of parts of this? i struggled to hear chris sometimes and the music seemed a little much. hmmmm

Sound mixing for Bon Appetite videos have always sucked. Most of their videos are too soft, and levels are all over the place

I saw all of the comments about the sound and the drums, and I really thought everyone was gonna be exaggerating.
But no, amazingly, it was as bad, if not worse than advertised. Truly, this might be the worst video Bon Appetit has ever made. The section around 9:30 - 10:00 is so comically terrible, the drummer is just absolutely popping off with the solo. Portions of the video were actively stressful to watch.

Chris and Rawlston might be able to get there. Chris gets that the BAEU is a sitcom. Rawlston is capable of learning to do the on camera stuff. The folks behind the scenes need to get better.

Some people in the comments are just here to hate.
Acne doesn't go away the first time you make a change in your diet or put on the cream. You have to keep working at it until your skin looks better or even try different products etc. The important thing is that you're doing something about it.
You should do an episode with a Filipino. We use a lot of vinegar in interesting ways that a lot of viewers would probably enjoy. A good, non-intimidating starting point is chicken adobo and sawsawasn (chili, garlic, vinegar, soy dipping sauce).

hahahaha Chris is like an excellent chef, but he "trying" to fry a Caribbean style fish, it was just funny AF, he removed one of the best part of the fish, the head, and he didn't fry the TAIL!!!! the other next best part of a fried fish! hahahahaha

As a West Indian myself, I wouldn't recommend a fish that size for Escovitch, that size is ideal for roasted fish. Perfect for Escovitch is the smaller fish so it can be for a single serving and very easy to fry. That snapper was so big the tail didn't get a good fry. The head and tail are the best part to some people!

I'd watch Chris taste test anything so Ralston better kick it up a few notches to keep up. Chris is a font of information, genius in the kitchen. Ralston is good on camera as his personality comes through pretty well.
