I love the depth and detail you go into, as well as the quirky vocal work and comedic relief. If I had to nitpick, I would say you sometimes get bogged down trying to repackage something you already said in a way that becomes redundant (I, at least, understand you the first time), but I do that too when I'm talking about something I'm passionate about, so it's hard to fault you. For me, it's had something to do with not having enough trust in your audience, so you feel like have to guide them to the correct interpretation. Just something to be aware of; constructive criticism. Keep up the great (ever-improving) content!

The niche is approaching the 10th round and has taken some heavy shots, but is still standing strong. It is impressive what the Niche was able to accomplish from its beginning.
The thing I really appreciate with the Niche is the low retention and absence of old grounds getting mixed with my grind. This translates into the absence of old sticky oxidized oils in my extraction. I was lucky to get one at a price much lower than anything mentioned in this video. It would be fun for me to see the Sculptor besides a Niche when it is reviewed with espresso burrs.

I've had Timemore Sculptor 078 for about seven weeks now, and have been trying to dial it in. The first five brews I made with an arbitrary random grind setting of 12, with the motor speed set at the midway point, as it came, at 1100 RPM, were excellent--best I've had in a long time. I'm using a moderately dark roast. But then I couldn't reproduce that. I experimented with different speeds and variation in the fineness, settling on 10 with the fastest speed of 1400 RPM, which made a pretty good brew. But then I remembered you're supposed to season the burrs, so I put 5 pounds of about 7 pounds of older coffee I set aside for that purpose through it, using the coursest or next to coursest settings, and after that couldn't get good coffee at all. I took th the burr out and cleaned it and the one still attached inside and put it back, which didn't help much, and it wasn't that dirty. Eventually after continuous experimentation, and setting it to the slowest speed of 400 RPM, I got good coffee setting it to 9 on the grind dial. But after one good cup that way, next time it wasn't good, so I'd have to go to 8.5 on the dial, which would be good. But then the next cup after that would not be good and I'd have to go to 8 on the grind. This continued that way every two grinds, so I'm down to 6 on the dial. I'm worried if it doesn't stop becoming courser after each run I'm going to run out of finer settings. Maybe this is the end of the so-called seasoning of the burrs, but it had better come to an end soon. Has anyone else experienced this type of thing on their new grinder?
When the kickstarter opens for the espresso models, do you think it'd be smarter to go for the 078S for the bigger burrs that you said look a lot like the EG-1 ones or for the 064S for the wide availability of burrs in that size? (SSP etc). It sounds like there's a day 1 discount on the Kickstarter, so we'd probably have to make the choice before folks had a chance to review.

I'm likely going to order the 78 for espresso when it hits kickstarter. I have been using the Breville SGP for almost 3 years now. It works fine but it has always been lacking. This checks off all the boxes. Aesthetic, quality, price, performance. Time to get the credit card ready.
I usually think of the static as nothing but a nuisance but it's interesting to see Timemore use it to their advantage and essentially use it as a fines collector.
As a UA-cam premium user I usually skip ads but this one was the first one in a very long time that I wanted to actually watch. While I don't need a razor I'm all up for your unique take at these kinds of ads. Loved this video. Stop future-spending my money Lance, it's not fair!
Man Timemore really putting themselves out in the market there and better than ever. Looking forward to their quality over quantity approach unlike their generic minded competitors at home. We need innovation and user experience design based on human interaction. They might branch out into something great down the line if they can maintain balance between budget and marketability.
You mentioned using the RDT method for reducing static on the Ode. I have one a V1 with the SSP MP burrs and saw a post/comment somewhere about simply touching the catch cup during the grind. I tried that and it works! Spritzing or putting a couple of drops of water on the beans before putting them in the hopper would almost always make a few beans stay in the hopper. Now, with dry beans, they all get ground and I'm not seeing any fines sticking to the cup or exit shoot. I don't know if it works for everyone but I'm pretty happy with the results.
I have a Niche and I am enjoying both the filter and espresso it gives me, I think the law of diminishing returns is very key in grinders above its price in the UK, several "Niche killers" have come up short in all sorts of categories and I think your own highly developed palate means that most of the reasons you find other grinders "better" are lost on me, and most other "normal coffee nerds" like me. Saying that I suffer the same upgradeitis as most coffee nerds so I will join the kickstarter and get a Timeore to see whats what. Might even do a UA-cam comparison for other Normies! ;-)

How do you think this compares to the DF83? I know you haven't tested espresso with this yet, but I'm looking for something that can do filter + espresso, and it seems like this will be a strong contender. I'm particularly curious whether the espresso compatible burrs will perform just as well for filters vs the purely filter model. Also curious how alignment was for you out of the box? Edit: Also anyone know about the timing of availability/pricing for US markets?
I think these grinders are really different. The DF83 is a sturdy and heavy animal that it's best for espresso. The DF83 can also do anything else but there are some caveats that can clog the grinder or mix some corse fines when you switch from filter to espresso and ruin your espresso if you don't first purge it. Also I think it's really soon to wonder if the Timemore would get out on its first iteration without problems as the Ode did. Ode is in it's Gen2 and really doing a nice job for the price. Will the Sculptor? On that price I rather wait 1 year after it's out, meanwhile for me for $150 more I have combo: the DF83 and the Ode Gen2 and couldn't be happier! Maybe with the cash I would go for the DF83 + Sculptor combo on 1 or 2 years later.
@@carlosfedericolopezspindol3103 I think DF83 can be good for pour overs too, but declumper tends to make more fines, so modding that would help, also improves flavour clarity a bit.
I’m glad we get more and more “affordable” grinders that get closer and closer to the performer of the really expensive ones. I always found it a bit ridiculous the need to spend €1500-5000 on a home grinder, not because I haven’t been guilty of that crime, but I also admit I rather not if given the chance. Obviously such high end grinders do offer a unique feature as fantastic build, precision, low machining tolerance, rpm but no matter how nice that is, it rarely translates into being x number better . It is really as you say diminishing returns in the cup. Even though the 98mm SSP burrs I owned before where fantastic, these where definitely not anywhere near the x price better. I must admit 64mm MP was never my favourite burrs, probably because I had those 98mm, so I opted for something else. But I’m glad to see we now get the benefit of larger burrs in this and the DF83 for a much more eatable price. Honestly I do think it’s a missed opportunity they made this so close to 80mm, has those burrs been 80mm this would had much more of an interesting platform especially as SSP are launching burrs to that.
Do you think there's necessarily a reason to get the 078S over the 064S? The major differences they listed is the 078S has 400W instead of 180W, up to 1400RPM instead of 1200RPM, and obviously the bigger burr size. This is my first stand alone grinder and looking to use purely for espresso.
Thanks Lance for being honest and telling how it is, even in the comment section. I am still amazed at how many Niche owners who love it (very well conceived and engineered machine for sure) have also convinced themselves that for 800 dollars the flavor quality actually fares well against competition. It doesn't at all with good beans. The workflow is wonderful that's about it. Flavor is very average for the price, many cheaper better options, even when it got out, but especially now of course.

In this video, you compared the TS 078 against the Ode 2, noting the TS 078 provided a superior tasting cup.....can you hypothesize whether the TS 064 would also trump the Ode 2 for filter (appreciating you are unlikely to have tried the smaller unit), or if the TS 078's advantage is solely due to a larger bur set? As a filter drinker who loves juicy fruity, light coffee's, would you take the 064 due to the high number of options, or pay another couple of hundred $$ and go 078 as its just that good and after market options will most likely come? Lance. I will admit that the way I found out about your videos and channel wasn't UA-cam's fancy algorithm recommending me videos after watching Hoffmann's videos. Someone else recommended me your channel and I am glad they did. You do a magical thing by making videos fun, engaging, and informational. All while being yourself (not sure what you are like off camera, though 🤣). You really make phenomenal videos. I even went back and watched your latte art series because it sounded interesting and you really were the best at teaching it on camera. Please, please, please don't change anything. You are doing great with the video design that you have right now. The length is perfect and, even in your past videos that you did where they were longer, the lengths were just fine. I feel that this was heavily due to the fact that you put chapter markers in there so it helps when I revisit the videos (which happens often). In short, keep everything the same. The length is perfect, the video design is perfect, it's all just perfect. I just have one request. Keep your facial hair and long hair. It looks great on you. Seriously though, don't change anything about the videos you are making. They rock.
I think there's something to fines collection, especially with filter. I'd much rather a grinder that is engineered to retain a small amount of fines (and chaff?) rather than be true "zero retention". The few times I used my mC4 for brew, I found myself using bellows to puff into a separate container to dump. It was usually all fines and chaff anyway. Haven't gotten a bellows for my Ode Gen 2, and don't think I need it but time will tell. Folks at Timemore seem to be cooking with some smart gas!

What I believe would be an absolute killer in the grinder market is interchangeable burrs. Toolless and aligned (so probably top and bottom carrier as part of the set you'd exchange)... Many people like myself are torn between the love of the mouthfeel of an espresso but also adore the clarity of a pour over. It seems even with the latest burrs you always have to compromise. And having multiple grinders is not always an option, either financially or logistically (my wife does not love me that much that my coffee gear can take over the counter space...). Interested to hear your thoughts!
Nice content as always! Glad you were doing comparisons with the Ode for filter. Seems like the design (flat burrs, hopper, and magnetic catch cup) is very similar to the Ode, with some definite upgrades. I will be curious to see what espresso is like once the burrs are available. I don't have a flat burr espresso grinder yet, but when those espresso burrs launch for the sculptor, It would be interesting to see you do a comparison between that and the Turin DF83 or even Lagom P64. Maybe a blind tasting like "Daddy Hoff" would do, just something to think about for future vids!

Considering getting rid of my DF64 for the 078S...do you think this would be an obvious upgrade or would you just upgrade SSP burrs to the DF64. Torn on what to do here
Was waiting for this review. I’ve been holding off on getting an electric grinder as my first one, as I’m just starting my home espresso journey. Was looking at the niche because of workflow, but thought it too expensive. Then really liked the look of the Varia, but then this one came on my radar and I just loved the design. Seems a little out of my budget though, but may be an investment to keep for a good while.
Check out the OXO conical grinder. About $100 when I bought mine about 4 years ago... I've cleaned it out once in order to get a finer grind for espresso... no issues with making a mess when grinding, even grinds, no static. I don't know how much more money would get me a measurable better grind. Add ons that have helped with improving my espresso have been a dosing funnel, a scale so I can get 18 grams of coffee loaded into a bottomless filter, and a screen for putting on top of my puck. If this grinder gets to the point of making good espresso ground coffee... might be worth it, but my entire espresso setup is less than $500 as my espresso machine was sent to me free for review. Get good coffee beans, grind fresh, enjoy. If you want to turn it into a hobby... try playing with manual lever machines etc..

Hi Lance, thank you for another great review. I have a wilfa uniform with ssp brew burrs. I only make filter coffee. I was thinking about the weber eg-1. But the sculptor 078 also looks very nice. It also has a fines collector that the eg-1 does not have. How big of a differance in taste is there, also regarding hitting astringency. Do you miss the fines collector on the eg-1?
I really wonder how this compares to the Orphan Espresso Apex! The Apex can make an absolutely spectacular cup, but to acheive that you will have to feed at a very slow rate. If the Timemore can match the grind quality, it might be a good idea to switch and save a chunk of time every morning😁
Loving all these new grinders in 2-3 years I’ll be indulging in a new grinder to replace my sette 270 and this is really promising maybe I’ll even find a used one by then!!

From the sound of it on facebook, they don't want you to swap the burrs! Not sure if you can't, if it's complicated / dangerous for the grinder, or they just don't want people messing with it, but I'm sure many will! They made it seem like people would throw off the alignment or something... but also I doubt they're doing perfect alignments at this pricepoint out of the box. But that would be nice.

I skipped the niche and got an eureka mignon instead, due to not wanting to deal with customs, which brings the niche at a 50% price upmark over the specialita. There are some nice features, and you can get this model without import duties in europe, as these ship from germany. It's still 200€ more expensive over a specialita, but there are some features here that are very interesting, and it isn't like the specialita isn't without fault. I'm not sure if it'll be a niche killer, but it'll likely be a contender between the current popular choices, and may put off more on going even higher end.

I tried that and it works! Spritzing or putting a couple of drops of water on the beans before putting them in the hopper would almost always make a few beans stay in the hopper. Now, with dry beans, they all get ground and I'm not seeing any fines sticking to the cup or exit shoot. I don't know if it works for everyone but I'm pretty happy with the results.
Lance is a real hero for time-stamping his videos so we can skip past the ads and get to the goods.

I have a Niche and I am enjoying both the filter and espresso it gives me, I think the law of diminishing returns is very key in grinders above its price in the UK, several "Niche killers" have come up short in all sorts of categories and I think your own highly developed palate means that most of the reasons you find other grinders "better" are lost on me, and most other "normal coffee nerds" like me. Saying that I suffer the same upgradeitis as most coffee nerds so I will join the kickstarter and get a Timeore to see whats what. Might even do a UA-cam comparison for other Normies! ;-)

How do you think this compares to the DF83? I know you haven't tested espresso with this yet, but I'm looking for something that can do filter + espresso, and it seems like this will be a strong contender. I'm particularly curious whether the espresso compatible burrs will perform just as well for filters vs the purely filter model.

I think these grinders are really different. The DF83 is a sturdy and heavy animal that it's best for espresso. The DF83 can also do anything else but there are some caveats that can clog the grinder or mix some corse fines when you switch from filter to espresso and ruin your espresso if you don't first purge it. Also I think it's really soon to wonder if the Timemore would get out on its first iteration without problems as the Ode did. Ode is in it's Gen2 and really doing a nice job for the price. Will the Sculptor? On that price I rather wait 1 year after it's out, meanwhile for me for $150 more I have combo: the DF83 and the Ode Gen2 and couldn't be happier! Maybe with the cash I would go for the DF83 + Sculptor combo on 1 or 2 years later.
@@carlosfedericolopezspindol3103 I think DF83 can be good for pour overs too, but declumper tends to make more fines, so modding that would help, also improves flavour clarity a bit.
I’m glad we get more and more “affordable” grinders that get closer and closer to the performer of the really expensive ones.
I always found it a bit ridiculous the need to spend €1500-5000 on a home grinder, not because I haven’t been guilty of that crime, but I also admit I rather not if given the chance. Obviously such high end grinders do offer a unique feature as fantastic build, precision, low machining tolerance, rpm but no matter how nice that is, it rarely translates into being x number better . It is really as you say diminishing returns in the cup. Even though the 98mm SSP burrs I owned before where fantastic, these where definitely not anywhere near the x price better.
I must admit 64mm MP was never my favourite burrs, probably because I had those 98mm, so I opted for something else. But I’m glad to see we now get the benefit of larger burrs in this and the DF83 for a much more eatable price.
Honestly I do think it’s a missed opportunity they made this so close to 80mm, has those burrs been 80mm this would had much more of an interesting platform especially as SSP are launching burrs to that.
Do you think there's necessarily a reason to get the 078S over the 064S? The major differences they listed is the 078S has 400W instead of 180W, up to 1400RPM instead of 1200RPM, and obviously the bigger burr size. This is my first stand alone grinder and looking to use purely for espresso.
I'll be waiting to watch a comparison video by you about this grinder vs the df83 when the espresso burrs come out!

Thanks Lance for being honest and telling how it is, even in the comment section. I am still amazed at how many Niche owners who love it (very well conceived and engineered machine for sure) have also convinced themselves that for 800 dollars the flavor quality actually fares well against competition. It doesn't at all with good beans. The workflow is wonderful that's about it. Flavor is very average for the price, many cheaper better options, even when it got out, but especially now of course.

In this video, you compared the TS 078 against the Ode 2, noting the TS 078 provided a superior tasting cup.....can you hypothesize whether the TS 064 would also trump the Ode 2 for filter (appreciating you are unlikely to have tried the smaller unit), or if the TS 078's advantage is solely due to a larger bur set?
As a filter drinker who loves juicy fruity, light coffee's, would you take the 064 due to the high number of options, or pay another couple of hundred $$ and go 078 as its just that good and after market options will most likely come?

Lance. I will admit that the way I found out about your videos and channel wasn't UA-cam's fancy algorithm recommending me videos after watching Hoffmann's videos. Someone else recommended me your channel and I am glad they did. You do a magical thing by making videos fun, engaging, and informational. All while being yourself (not sure what you are like off camera, though 🤣). You really make phenomenal videos. I even went back and watched your latte art series because it sounded interesting and you really were the best at teaching it on camera.
Please, please, please don't change anything. You are doing great with the video design that you have right now. The length is perfect and, even in your past videos that you did where they were longer, the lengths were just fine. I feel that this was heavily due to the fact that you put chapter markers in there so it helps when I revisit the videos (which happens often). In short, keep everything the same. The length is perfect, the video design is perfect, it's all just perfect.
I just have one request. Keep your facial hair and long hair. It looks great on you. Seriously though, don't change anything about the videos you are making. They rock.
I think there's something to fines collection, especially with filter. I'd much rather a grinder that is engineered to retain a small amount of fines (and chaff?) rather than be true "zero retention".
The few times I used my mC4 for brew, I found myself using bellows to puff into a separate container to dump. It was usually all fines and chaff anyway. Haven't gotten a bellows for my Ode Gen 2, and don't think I need it but time will tell.
Folks at Timemore seem to be cooking with some smart gas!

What I believe would be an absolute killer in the grinder market is interchangeable burrs. Toolless and aligned (so probably top and bottom carrier as part of the set you'd exchange)... Many people like myself are torn between the love of the mouthfeel of an espresso but also adore the clarity of a pour over. It seems even with the latest burrs you always have to compromise. And having multiple grinders is not always an option, either financially or logistically (my wife does not love me that much that my coffee gear can take over the counter space...). Interested to hear your thoughts!

Nice content as always! Glad you were doing comparisons with the Ode for filter. Seems like the design (flat burrs, hopper, and magnetic catch cup) is very similar to the Ode, with some definite upgrades. I will be curious to see what espresso is like once the burrs are available. I don't have a flat burr espresso grinder yet, but when those espresso burrs launch for the sculptor, It would be interesting to see you do a comparison between that and the Turin DF83 or even Lagom P64. Maybe a blind tasting like "Daddy Hoff" would do, just something to think about for future vids!

Was waiting for this review. I’ve been holding off on getting an electric grinder as my first one, as I’m just starting my home espresso journey. Was looking at the niche because of workflow, but thought it too expensive. Then really liked the look of the Varia, but then this one came on my radar and I just loved the design. Seems a little out of my budget though, but may be an investment to keep for a good while.
Check out the OXO conical grinder. About $100 when I bought mine about 4 years ago... I've cleaned it out once in order to get a finer grind for espresso... no issues with making a mess when grinding, even grinds, no static. I don't know how much more money would get me a measurable better grind. Add ons that have helped with improving my espresso have been a dosing funnel, a scale so I can get 18 grams of coffee loaded into a bottomless filter, and a screen for putting on top of my puck. If this grinder gets to the point of making good espresso ground coffee... might be worth it, but my entire espresso setup is less than $500 as my espresso machine was sent to me free for review. Get good coffee beans, grind fresh, enjoy. If you want to turn it into a hobby... try playing with manual lever machines etc..

Hi Lance, thank you for another great review. I have a wilfa uniform with ssp brew burrs. I only make filter coffee. I was thinking about the weber eg-1. But the sculptor 078 also looks very nice. It also has a fines collector that the eg-1 does not have. How big of a differance in taste is there, also regarding hitting astringency. Do you miss the fines collector on the eg-1?

The Apex can make an absolutely spectacular cup, but to acheive that you will have to feed at a very slow rate. If the Timemore can match the grind quality, it might be a good idea to switch and save a chunk of time every morning😁

Great to see some innovation on the grinder market! 64 mm with SSP burrs will probably be a little more expensive than the niche but I think that’s fine.
Might not need ssp in jt! They are making their own burrs so it'll come stock as an option.
@@LanceHedrick I saw a comment elsewhere that the timemore sculptor 64mm series spins opposite the SSP burr geometry and so SSP will not work in these grinders. Do you know if this is accurate?

From the sound of it on facebook, they don't want you to swap the burrs! Not sure if you can't, if it's complicated / dangerous for the grinder, or they just don't want people messing with it, but I'm sure many will!
They made it seem like people would throw off the alignment or something... but also I doubt they're doing perfect alignments at this pricepoint out of the box. But that would be nice.

I skipped the niche and got an eureka mignon instead, due to not wanting to deal with customs, which brings the niche at a 50% price upmark over the specialita.
There are some nice features, and you can get this model without import duties in europe, as these ship from germany.
It's still 200€ more expensive over a specialita, but there are some features here that are very interesting, and it isn't like the specialita isn't without fault.
I'm not sure if it'll be a niche killer, but it'll likely be a contender between the current popular choices, and may put off more on going even higher end.
