I was starting to doubt my decision to go for the 078s and hard considered switching to the 078 - but this clears it up for me! 078s should be great - upgrading from a built-in breville grinder plus a baratza encore for filter to the 078s will be a massive improvement and then to add the ability to buy the turbo burrs if needed Thanks @lance!

As someone with no stakes in this (no Kickstarter backing and I don't plan to buy a grinder in the short term) I have to say I love the direct approach and I enjoyed the video immensely. Thank you for not doing the carbon-copy, marketing friendly, hype amplifier review that is somewhat common these days. Love the energy and I may or may not have snorted at the sip and the face at the end of the video 😂

Hey Lance, I certainly appreciate that you've matched the industry's 'hype' over these with your coverage both objective and subjective now. In particular I found this video helpful in providing me with some context, as a Niche owner who has been looking at introducing something onto my bar to allow me to explore filter coffee further. It's tempting to go for the 078 and keep the Niche - but the 078S sound like a great multipurpose option (perhaps lateral move for my espresso, but a great improvement on filter).
Niche to me is too muddled even for espresso, you can barely taste any floral or fruity notes if at all. That's wasting money on a grinder and coffee on my book. I believe it won't be a lateral move even for espresso.
@@JohnZ556 depending on what you want from your espresso, you sound bang on the money. This is definitely why i held off on a niche and why the 078s excited me. Seems to align pretty well with what Lance believes too. I think he has to temper opinions like that because it depends so much on what origins and roast levels people enjoy
@@Tobyjrn6297 Well... I got a P64 SSP MP and a few 1Z on hand. A neighbor of mine has Niche Zero and C40. And I have a cafe nearby that utilizes ek43. For the money and popularity, I am very disappointed at the Niche and C40. As far as flavor goes, Niche is about the worst. C40 is way too expensive for the grind speed and work flow, he ended up paying approaching 500bucks after upgrades. It takes 1-2min for espresso, emphasis on acidity too much both for espresso and brew.
@@Tobyjrn6297 P64 MP produces the best filtered and most flavourful espresso I had so far. Didn't expect it to do that well for espresso and milk drinks. I guess tolerance, alignment, bearing rating and stable RPM all matters.

I loved this style of video and I needed so much. I backed the 078s at the kickstarter price and own a niche zero right now. The one thing I am not getting of my zero is acidity and it started to annoy me. After this video I am sure that I will stick with my order. THANK you so much lance

I mainly pull shots on my gear pump LM vs filter (80/20) For the initial KS price, I reckon the 078s is a no brainer espresso grinder plus now we have the option of buying the turbo burr in the near future. I valued workflow and price to performance ratio so to me this is near perfect without spending to the levels of the EGs/EKs/P100. I also have a Kopi Deva on order so would appreciate your thoughts on it as well. Cheers!
Here's the plan: I'm sticking with the 78s for espresso only (don't do filter) and Timemore hires Lance to tweak those espresso burrs to match the greatness of the turbos. (FYI I've had the same Compak Pro barista Conical titan for years and am excited to go flat for a reasonable early bird price)

@@MonoSQ Yeah I imagine there are lot of people with the same dilemma. On a good day, Specialita can nearly match to what I get served in cafes but more often than not I can tell that everything from body, to sweetness and clarity is lacking a bit. So you're keeping the 78s? Lucky for me, I got mine at the launch day price at 500$.
@@Val_Smith I'm using the original bellows and single dose hopper and I'm pretty much getting 0-0.2g retention with RDT so that's not really an issue for me. Which bellows are you using?

I really appreciate the subjective advice presented in here and think that--taken with the first video--really rounds out the review of these grinders. Your comments have made me realize that I will be totally happy with the 078S; it will be a major step up from my Smart Grinder for espresso and even if it isn't a major step up from my C3 Pro hand grinder for filter (probably will be) then at least the workflow will be better.

I'm looking to buy my *FIRST ever grinder* and that is exactly what I wanted to know (if it was a good buy or not as first grinder) at 14:54. _In the beginning I ordered the 064s(early bird 1) then I upgraded to the 078s (before the price increase), because the more robust build and 400W motor(and bigger burr surface area), even tough no aftermarket 78mm burrs(right now), but I'm not interested in replace the burrs either way, at least right now. I'm more interested in how long it will last(and needless to say of curse; grind quality), and I'm thinking stronger motor and better build gives you more longevity(like many more years, hopefully)!_

You made me decide to switch to the 078 from the 078s (which thankfully Timemore lets us do now even in Europe), which is good for me, and I guess does not matter for Timemore so good. This second video is much appreciated since I think we were all with you on the high expectations for the other three versions after your initial early review, and then the first 'full' review was a bit dissapointing for us, after you were dissapointed yourself in the quality of the other three versions, even if they are still very good grinders especially for the price point.

Big love to you, Lance! I am highly anticipating my 078s as my first electric grinder, especially at the early kickstarter price. As a lightly roasted-espresso loving home brewer, it will surely do wonders for my workflow, stepping in for my MK3 Comandante, which will be retired for everything coffee grinding related outside of the house; grinding a shot of espresso for around 2 minutes gets bloody tiring when I host a shindig at my place and everyone lines up for a brew.
Love it. Can’t get more aggressively clear than that. From what you’ve said I think I’m happy to jump on a zerno now, especially after also saying things like the df83 beats the 078 for espresso. Zerno and meticulous for me then!

I’ve ordered the 064s as my first grinder ever and I’m really excited 🤩! Currently I have a super-automatic Philips and I need to upgrade to real espresso 🤪 for the coffee machine I’m not sure if Gaggia Classic will be enough because I can’t do the adjustments to temperature and pressure 😵💫 maybe I should save and get something slightly better that doesn’t need mods
Gaggia classic pro is a great machine that will serve you well for many years. The OPV valve spring mod is super easy to do and there are hacks you can do to get more consistent temperature.
@@marcelopcrolo yes! I'm very happy with my coffee arrangement. Coming from an automatic it's really a noticeable improvement in my coffee, but keep in mind that I haven't tried any other grinder
I had a Eureka Mignon XL for about 3/4 years. As I went into light roast I was grinding to the point where my burrs were touching. I sold it for about the same price i purchased it. Got the 65s. I have plenty of space to grind really light roast. I did immediately tasted the difference using the same coffee beans and extraction method. In the future I want to get a ssp or cast burs. But I want to get to know this grinder. No need to upgrade yet.
I have a Chihuahua dog and I'm thinking of upgrading to a cat. Do you think I'll have more fun playing with the cat than with my current dog? Will there be a workflow improvement in feeding and cleaning the cat? I'm frustrated with needing to wash my Chihuahua every two weeks, and I heard on Reddit that you don't need to wash a cat as often.
tbh i've been considering this exact thing, but with regards to a chinchilla and my current (played out) hedgehog. I mean, they're both great. they get the job done. but, the fun-factor of the hedgehog is a bit over. One could say my honeymoon phase has ended. The chinchilla is just sitting there, with its glorious fur, asking for me to stroke its mildly confusing sheeny coat. r/chinchilla is p chill, tbh, and is probs where i'll be at the next few days to make my final decision. The fate of ole hedgykins rests on redditors. What do you think?

I'm currently using a Breville Smart Grinder for drip and a Baratza Sette for espresso. I backed the Sculptor 078s to use for espresso and I'll probably migrate my Sette to drip usage. Really excited to give it a try when it arrives.
Amazing video, and energy Lance. Convinced me that it wasn’t going to be enough of an upgrade for me (being more espresso focused) over what I have. Was hoping for the 078s to be the same « anomalie » the 078 is to pour over. Will stick to my manual grinders and trusty eureka for now. And just gives me a reason to get a new set of burrs for my Pietro 😂

Thank you for your hard work in giving as much information as possible to us “petulant children”. =D Based on all your comparisons and the details you’ve given, as well as the other stuff that other content creators have put out, I do feel a lot more comfortable to finalize my 078s selection. It’s going to be my first espresso-centric electric grinder (I currently own the Hario Skerton, 1zpresso XPro and Baratza Encore) and so the Sculptor 078s should be able to round out my grinder collection and hopefully belay “upgrade-itis” for the foreseeable future. Excited to receive it in June/July/Aug/whenever. Keep up the good work Lance. We appreciate it a lot.
If you wan to change to (several) different burrs(regularly), it would be a much cheaper option to go with the 064s, then the 078s, but the burr swapping is not simple and fast as other grinders as he said in his previous video. So if you want/like to swap burrs then the 064s, if not, just use the stock burrs, then the 078s is the answer.
This is amazing - how you responded to your community in such a timely manner ! I have a Breville Smart Grinder - and seems like 064s would be quite a decent upgrade - would you say so ? You mentioned a lot of names in your comparison but not that one 🙈
Loved it, thank you for this add-on. I do suspect, however, that had you confirmed the 078s as the "Niche Killer" in the first video, you wouldn't have made this one, because that would've been enough for a lot of people on the fence😂
I knew whatever choice I made would be better than my Capresso Infinity but I got rid of my el cheapo Espresso Machine a year ago and I think I'll just stick to filter only. I swapped my pledge from 78s to 78. Thanks Lance!
This is exactly what I needed to hear. As a European it is hard to get an option-o, timemore or varia if you dont want to overpay (import taxes + shipping). The eureka's on the other hand are widely available. I just started getting into espresso, so I will be going with that for my first grinder. Thanks Lance for sharing your honest opinion!

Thanks for this Lance. I know the feedback to the first video was frustrating. I really appreciate the subjective advice presented in here and think that--taken with the first video--really rounds out the review of these grinders. Your comments have made me realize that I will be totally happy with the 078S; it will be a major step up from my Smart Grinder for espresso and even if it isn't a major step up from my C3 Pro hand grinder for filter (probably will be) then at least the workflow will be better.

_In the beginning I ordered the 064s(early bird 1) then I upgraded to the 078s (before the price increase), because the more robust build and 400W motor(and bigger burr surface area), even tough no aftermarket 78mm burrs(right now), but I'm not interested in replace the burrs either way, at least right now. I'm more interested in how long it will last(and needless to say of curse; grind quality), and I'm thinking stronger motor and better build gives you more longevity(like many more years, hopefully)!_

You made me decide to switch to the 078 from the 078s (which thankfully Timemore lets us do now even in Europe), which is good for me, and I guess does not matter for Timemore so good. This second video is much appreciated since I think we were all with you on the high expectations for the other three versions after your initial early review, and then the first 'full' review was a bit dissapointing for us, after you were dissapointed yourself in the quality of the other three versions, even if they are still very good grinders especially for the price point.
How do you go about switching Robin? I had ordered the 078s on kickstarter as the 078 wasn't available for Europe at the time but would switch if that's possible now

I am highly anticipating my 078s as my first electric grinder, especially at the early kickstarter price. As a lightly roasted-espresso loving home brewer, it will surely do wonders for my workflow, stepping in for my MK3 Comandante, which will be retired for everything coffee grinding related outside of the house; grinding a shot of espresso for around 2 minutes gets bloody tiring when I host a shindig at my place and everyone lines up for a brew.
This was exactly the kind of advice I was looking for!

I’ve ordered the 064s as my first grinder ever and I’m really excited 🤩! Currently I have a super-automatic Philips and I need to upgrade to real espresso 🤪 for the coffee machine I’m not sure if Gaggia Classic will be enough because I can’t do the adjustments to temperature and pressure 😵💫 maybe I should save and get something slightly better that doesn’t need mods
Gaggia classic pro is a great machine that will serve you well for many years. The OPV valve spring mod is super easy to do and there are hacks you can do to get more consistent temperature.
Are you happy with the 064S ? I'm trying to decide between niche zero and 064s..
@@marcelopcrolo yes! I'm very happy with my coffee arrangement. Coming from an automatic it's really a noticeable improvement in my coffee, but keep in mind that I haven't tried any other grinder

I had a Eureka Mignon XL for about 3/4 years. As I went into light roast I was grinding to the point where my burrs were touching. I sold it for about the same price i purchased it. Got the 65s. I have plenty of space to grind really light roast. I did immediately tasted the difference using the same coffee beans and extraction method. In the future I want to get a ssp or cast burs. But I want to get to know this grinder. No need to upgrade yet.
I have a Chihuahua dog and I'm thinking of upgrading to a cat. Do you think I'll have more fun playing with the cat than with my current dog? Will there be a workflow improvement in feeding and cleaning the cat? I'm frustrated with needing to wash my Chihuahua every two weeks, and I heard on Reddit that you don't need to wash a cat as often.
tbh i've been considering this exact thing, but with regards to a chinchilla and my current (played out) hedgehog. I mean, they're both great. they get the job done. but, the fun-factor of the hedgehog is a bit over. One could say my honeymoon phase has ended. The chinchilla is just sitting there, with its glorious fur, asking for me to stroke its mildly confusing sheeny coat. r/chinchilla is p chill, tbh, and is probs where i'll be at the next few days to make my final decision. The fate of ole hedgykins rests on redditors. What do you think?

I'm currently using a Breville Smart Grinder for drip and a Baratza Sette for espresso. I backed the Sculptor 078s to use for espresso and I'll probably migrate my Sette to drip usage. Really excited to give it a try when it arrives.

Amazing video, and energy Lance. Convinced me that it wasn’t going to be enough of an upgrade for me (being more espresso focused) over what I have. Was hoping for the 078s to be the same « anomalie » the 078 is to pour over. Will stick to my manual grinders and trusty eureka for now. And just gives me a reason to get a new set of burrs for my Pietro 😂

Thanks for all your in depth reviews tear downs, Lance. I've had the Baratza Virtuoso+ for a few years and have been feeling stuck with the quality of filter brews for a while now. Based on all your comparisons and the details you’ve given, as well as the other stuff that other content creators have put out, I do feel a lot more comfortable to finalize my 078s selection.
It’s going to be my first espresso-centric electric grinder (I currently own the Hario Skerton, 1zpresso XPro and Baratza Encore) and so the Sculptor 078s should be able to round out my grinder collection and hopefully belay “upgrade-itis” for the foreseeable future.
Excited to receive it in June/July/Aug/whenever.

Yeah he didn't touch at all about the difference between 064s and 078s.
He's still little bit vague about 078s in this video too.
If you wan to change to (several) different burrs(regularly), it would be a much cheaper option to go with the 064s, then the 078s, but the burr swapping is not simple and fast as other grinders as he said in his previous video. So if you want/like to swap burrs then the 064s, if not, just use the stock burrs, then the 078s is the answer.
It's likely the 78 will get SSPs. Making your decision even more complex.

I have a Breville Smart Grinder - and seems like 064s would be quite a decent upgrade - would you say so ? You mentioned a lot of names in your comparison but not that one 🙈
Most grinders are an upgrade from the SGP. 064S sounds like a great pick.
I'm pretty sure he did specifically mention it as being an upgrade from such a Breville?
Loved it, thank you for this add-on. I do suspect, however, that had you confirmed the 078s as the "Niche Killer" in the first video, you wouldn't have made this one, because that would've been enough for a lot of people on the fence😂

I knew whatever choice I made would be better than my Capresso Infinity but I got rid of my el cheapo Espresso Machine a year ago and I think I'll just stick to filter only. I swapped my pledge from 78s to 78. Thanks Lance!

This is exactly what I needed to hear. As a European it is hard to get an option-o, timemore or varia if you dont want to overpay (import taxes + shipping). The eureka's on the other hand are widely available. I just started getting into espresso, so I will be going with that for my first grinder. Thanks Lance for sharing your honest opinion!

Hi! This looks like an insanely easier workflow than my Mazzer Mini (not the "e") that I've added a chute and bellows to. Is it gonna give me better product in the cup? Don't see much mention of the older workhorse grinders anymore.
