How to make Bacalaitos - Puerto Rican Codfish Fritters

  • Today I am making Bacalaitos with my in-laws. This recipe is from Dimas who lives in Caguas, Puerto Rico. He is my Father-in-Laws brother......my Uncle-in-Law lol.
    Also try my pastelillos de carne - • Pastelillos de Carne ...
    Ingredients for Bacalaitos
    4 ounces bacalao (salted codfish)
    2 cups flour
    1/2 teaspoon baking powder
    2 teaspoons Kosher Salt
    2 Tablespoons achiote oil
    or
    1/2 - 1 pack of sazzon
    6 black peppercorns
    6 garlic cloves (adjust to your taste, I love garlic :)
    1/2 white onion
    8 recao leaves
    or
    2-3 Tablespoons chopped cilantro
    2 cups water

    This just took me back to my childhood. I used to sit in my Tia Mercedes kitchen while she would make these for us. The wonderful aroma in the kitchen. This was a Friday night thing in my family. Thank you for the video. Now I'm hungry.

      +farleen Lol, that's funny. It's especially fun when my white side of the family and my husband's family get together - they love each other, but you can definitely see some cultural differences :) We do all love the bacalaitos though .

      Hi :) I have honestly never tried it that way but it makes since that it would work. I always cook mine since I usually make these the day after making bacalao (using the leftover fish from the bacalao). You are right though, the fish should cook while the fritter is frying.....just cut it into small pieces before you start.       @@bestbitesforever it came out yummy. Since you bread & fry fish I figured it wouldn't have to be boiled. Yes it came out yummy. I'm making some again today from leftover fritter masa. Sorry I can't write Spanish. I'm Puerto Rican from N.Y.C. but I live in Cape Cod MA now. I miss N.Y. food!

      Cool, I'm so glad that it came out! I'm going to try it that way next time :) No big deal that you don't write in Spanish. English is my first language and my Spanish is only so-so but getting better. My husband is the one that's Puerto Rican and the reason that I make so much Puerto Rican food (I'm as white as they come lol). I've never lived in NY but I've been there, the food is great for sure!

    This is a favorite in all the islands.We call it salt fish fritters/cakes served with a dipping sauce at times

      I absolutely love these. I've only had them in Puerto Rico and here when the family makes them but if I make my way to some of the other islands I'll definitely look for them :) What kind of dipping sauce do you make with them? My husband likes them with either hot sauce or that vinegar pineapple sauce....I can't think of the name of it.....

    I just found this video and I have to agree with the recipe and what your father-in-law said, if you don't like it you're a Embustero, LOL 🤣 The only difference in my sofrito I blend it before hand put it in jars; less work. 😄

    Other videos n people add some of the salt fish water to flour gives it more flavor to the batter, I'm mixing videos adding some of the fish water to batter n onions from your video others didnt use since I dont have onion powder thanks for sharing.im making some right now fish is boiling😋😋😋

    I use canned cod Portuguese style when I want shortcuts! add sofrito . I add bits of CULANTRO!! Its still bacalaitos "estilo Boricua"!!

    My Puerto Rican husband has been asking for bacalaitos for years and after finding your incredible pastele recipe, I was excited to see one for the codfish. I'm curious though, I stopped using Sazon years ago because of the MSG and I'm seeking more whole-food, traditional options. Most of the time I work around the Sazon easily because most of the recipes are "wet" stews and braises... but I'm not sure how I'd do that here. I'm thinking that garlic powder, salt, cumin and ground achiote could do it since the batter calls for fresh recau. The Sazon box reads, (con culantro y achiote) and they translate that to "cilantro and annatto". Cultantro is NOT cilantro though, it's recau, which has en entirely different flavor.
    What are your thoughts?

      Yes, I totally agree with you that you could use a combo of those spices, you could also add just a small amount (about a Tablespoon) of achiote oil into the onion mixture before you add it into the flour ua-cam.com/video/CcACp3_X_Tw/v-deo.html For any of my recipes that call for sazzon, you can usually start by substituting the oil at the beginning with achiote oil.       Es mas facil conseguir Cilantro. Recao es un poco mas fuerte en sabor. Es de acuerdo a su prefrerencia personal. Gracias por ver :)

    I cannot get dried cod anywhere. I live in the north eastern part of Georgia. There are no Puerto Rican stores where I live. Can you direct me to where I can find some? or can I use fresh cod or frozen cod?

      Hi :) You can usually find it at Asian markets if you happen to have one around you. You can also buy it on Amazon at this link amzn.to/2VKvYme You could use fresh or frozen if that is all that you have available but you may need to add a bit more salt to the recipe since the bacalao is salted and dried. If you're using the fresh or frozen, try the recipe as is and fry one small bacalaito to taste. Then adjust your seasonings from there :) I hope that this is helpful! Thank you for watching :)

      +wtglb Thank you so much! The green leaves are called racao. It is available at most Asian or Latino markets in the States. I'm actually in Phoenix and there are a few places that I can get it. You can also get it online if you can't find it near you. Also, it is a close relative of cilantro so if you can't find the racao, cilantro is a good substitute.     Do you really have to boil fish for 15 minutes? I'm a try without cooking fish in water. It should cook when you fry the fritters?

      +Mara Tirado It really does add a great flavor. I had trouble finding it too for awhile and then I found it at an Asian Market. Have you checked your local Asian and Indian markets, you may have some luck there. If not, you can buy the seeds on Amazon and they should grow great for you in Miami......I miss South Florida, I used to live there too :)l

      +Mara Tirado There are several names for it - long coriander, wild or Mexican coriander, fitweed, spiritweed, stinkweed, duck-tongue herb, sawtooth or saw-leaf herb, and sawtooth coriander. Although it has all of these names, I've only seen it under the English name long coriander. I also found this seller on Amazon. I've never bought from them though so I'm not sure about the quality and so forth. I hope this is helpful :)

      Hi :) The seasoning packet is Sazzon. You can either use it or replace it with 2 Tablespoons of achiote oil (annatto oil).     I run the bacalao under water to take off the top salt then I boil it for a bit and that's it. If you take off all the salt there's no point in making it. I never use baking powder because I don't like them puffy.

      bestbitesforever 💜 Not a problem, I totally understand! Yes I was able to use the recao I'm growing too!! I cooked them at about 350 in the deep fryer & altered the recipe just slightly but they were super light & fluffy! Best recipe ever & everyone else thought so too!! I'll be making them again tomorrow they were so good!!!

      bestbitesforever 💜 Yes they were thank you!! When I say I altered slightly- I did a full teaspoon of baking powder like you suggested, double the cod to about half a pound & left them in big pieces, & instead of regular water I used Perrier! I can't wait to try your other recipes!! 😁

    Your recipe is loaded with Bacalao! Sadly, all the kioskitos in PR only sell lard pancakes, as these have absolutely no bacalao in them. I can't remember the last time I had a bacalaito that had any bacalao in it! SAD!

      Really? Why is it embarrassing? I don't speak hundreds of languages. Should I be embarrassed of each individual one or are you in some way elitist or racist and find Spanish to be the most important so I only need to be embarrassed of that one?
