Common Sci-Fi cliché: Humanity is the jack-of-all-trades, while everyone else specializes. Because it's easier to write a culture where everyone's the same, as opposed to the vast array of cultures, beliefs and customs that Humanity encompasses.

Legends isn't canon either, but we still talk about it.
DovahSpy Well Legends is canon to itself, but not to the Disney canon as they're 2 separate timelines. The two continuities are still completely valid, just not to each other.
"Alien Exodus" (the unfinished book you were talking about) was never canon to anything. Because it was never even made.

I always assumed that the purpose of "Knights of the Old Republic" was to establish a connection between the "present" of Star Wars and the ancient past of modern times. The Rakata took us as slaves and distributed us all over the galaxy, to the point our original culture, religions, and other institutions were forgotten, including our original homeworld.

That is extremely interesting just for the fact that it could pretty much be our future as a specie you're explanation was target; humans are easily adapted to almost every new environment they are in so their survival rate is extremely high compared to other living things. I always find it a little annoying that “humans” are able to adapt to almost anything while aliens get Pidgeonholed. I know it’s for ease, but it always strikes me as odd since many animals on earth are just as adaptable as humans. It would stand to reasons that, in order to achieve space flight, you have to have some pretty impressive skills in various fields. And yet its only humans that have unique characteristics while everyone else is basically a copy of another.
Agreed.
Humans are naturally an unusually adaptable species. And thats not because of technology or anything. We are a highly generalized species, able to live in various climates and eat a wide variety of foods. Adaptations which make us more adaptable include our ability to sweat, our omnivorous diets, and not relying on local temperatures to know when to breed, hibernate, etc.
If you were to, say, take a tuatara and make them fully sentient and intelligent, they still wouldnt be able to adapt to very distinct climates or diets very easily.
Now thats not to say you couldnt also have adaptable aliens, there are other animals that are similarly or even more adaptable than humans. But humans are still fairly high on the 'adaptability' scale. Many animals arent even able to reproduce in a different climate.

Probably depends on what you mean by "discover". Some species have had religions involving the Force or similar concepts for a long time, but don't necessarily have a well-developed tradition of using the Force.

This origin story of the humans in Legends must be a great story. Good job!! Hopefully, the new Canon will dig ground for this kind of concept, but having more "sensibility" embedded in its flavor. But on the other hand, I love Legends. Keep it UP!! 😃👍🌠

In Robert J Sawyer's deleted novels Alien Exodus and Human Exodus, some humans from the dystopian 25th century escaped from earth, went into a wormwhole and fled to the SW Galaxy. They were then captured by rodian slavers, who sold them to hutt ancestors. Years later, the human slave leader, 'The Skywalker' Cosmo Hender used the force and freed all the slaves.

The very first draft of Star Wars says that the story takes place in OUR galaxy, in the 33rd century. The title card "A long time ago in a galaxy far, far away..." was added to the film very late in the editing process.

There's a problem with this history. The Zel was able to cast the Tongue off the planet. Then later the Zel aka humans were able to learn from the Rikkota to obtain their own space travel. Do you see the issue? So, if the Tongues were able to leave the planet, then they already had their own space technology, far before the Zel (humans) did. So, how did the Zel even win if their technology was so far below the Tongue that they had space technology first???? This is the problem with comic book history, or at the very least someone not properly thinking it through when they made this crap up. :P

I have another theory:
When they say, "a long time ago, in a galaxy far far away,at the beginning of every Star Wars movie, we can assume that the movie is actually taking place in our galaxy, in the far, far future, say, the year 10000, and us, the viewers, are actually a different alien species in a different galaxy even farther into the future, say, the year 100000. The reason that humans are in the movies is because the movies are taking place in our galaxy, but humans have become so advanced (since its like the year 10000) that we have spaceships and all that other stuff. And, the reason it says, "in a galaxy far, far away," is because the alien species viewing the movie (us) is in a whole other galaxy in a whole other time frame.We can't always assume that the people viewing the movies (us) are always humans. This may have made no sense at all, but its makes sense to me, and its really hard to explain. It would be easier to explain via a drawing.

Cyantile the part of the sarlacc sticking above the sand is just it's beak. Under the sand, is the rest of the sarlacc. It digests its prey over the span 1000 years. The prey is conscious throughout the entire digestion process. Pretty gross if you ask me. (I learnt all this from various UA-cam videos. The main one being from the Cancrizans)
