Great video! Just making this recipe now. Do you let the dough rest covered for about an hour. It wasn't mentioned and thinking the same time as regular dough resting time.

Great recipe. The only thing missing was how long to cover the dough for after kneading it. I did an hour then took it out and cut into 3 pieces.
