    The cutlets are all good, but the Palermitan cutlets are even better! This Sicilian recipe is not only very simple to make, but has the final result to make adults and children happy. This second meat dish has the characteristic of having a very crunchy and very very aromatic crust. In fact, together with the breadcrumbs, other ingredients are also mixed such as aged pecorino, garlic, parsley and chives.
    Furthermore, these are baked cutlets and this makes them perfect for those who don't want to eat fried food or can't for various reasons. To make the outside crunchy, I'll tell you a secret: just brush the surface of the slices of meat chosen to make the recipe for Sicilian cutlets with a little oil, in this way, however, the breading will not dry out in the oven and will still become golden .
    If you want to bring to the table a second course that is tempting for anyone, I suggest you prepare them. You can combine the meat cutlets with a simple mixed salad, grilled vegetables or, why not, delicious french fries.
    ► Ingredients to prepare the Palermitan cutlets:
    Slices of veal 4 slices
    Breadcrumbs 80 g
    Aged pecorino cheese 40 g
    Lemon zest 1
    Chives 1 bunch
    Parsley 1 sprig
    Garlic 1 clove
    EVO oil 4
    Salt to taste
