Homemade Soft Tofu - Silken Tofu from Scratch

  • Here's an easy to follow method to make your own smooth, high quality silken tofu. Try using fresh homemade tofu in your dishes and you'll be surprised at its delightful pure taste compared to the store-bought product. All you need for the recipe are inexpensive dry soy beans plus a little gypsum powder.

    INGREDIENTS:
    200 g (1 cup) soy beans
    750 ml (3 cups) water
    Coagulant:
    3/4 tsp gypsum powder
    1 tbsp water

    This is what I've been looking for! Good scale for home kitchen, fairly traditional method. I've tried making tofu many times and always failed, along the way I got to like soymilk itself and just enjoy that. I think I will try again!

    Thank you so much. I'm going to try it when my gypsum arrives! I have failed 2 times out of 3 with nigari. So sad 😥 So much time went into soaking the beans overnight , grinding and straining, cooking , then I add the nigari and no coagulation, just separation. Very frustrating . I give up on Nigari!!! Thank you so much for the measurements, maybe it will work out for me this time ❤️

    thanks for this recipe! I've tried it several times now, and every time my tofu yield has been much lower, around 140-180g (with around 380g of soy pulp/okara after squeezing out the soy milk, and 390ml of water being pressed out of tofu). I've been using a rather small blender (500W) where I blend the soybeans in batches of around 200g (soaked). do you think the small blender might be ineffective in getting the nutrients out of the soybeans, or do you have other ideas?

      Yes. You need to grind the beans and get as much soy milk as you can out of them. Good luck.

    Any recommendations or links of what to do or how to reuse the pulp at 2:23?
    And what about the water squeezed out at the end?
    What is the storage life? How can it be stored?

      The pulp is called okara. I'm sure you can search many recipes of it online, but I heard that you can use it in soup to thicken the soup.

    just the recipe i needed. is this the same tofu firmness to eat with ginger syrup? the type served at dim sum restaurant?

      Tu Ho, I think you're talking about making TOFU-FA, if so, you just stop the process right after adding the gypsum powder. No need to press out the liquid. Wait for 5 minutes and serve with the ginger syrup.

      ohh yes, if you can tell me how to make it tastes like coconut or orange (or pineapple) flavor.. my guess would be at the same time as when you mix the milk with the gypsum?.. nice work and thank you for sharing, i will try it for sure. : )

      It is safe to eat it without further cooking. It was boiled for 10 minutes.

    Excuse me for my ignorance, but I search "gypsum" in the translator.
    And the gypsum are made for construction. To make drywalls.
    I mean is that real gypsum? Or there is a culinary gypsum that people can actually use on the kitchen?

      There is special culinary gypsum. :) Alternatively you can use nigari which is magnesium chloride. You can buy the food grade versions of these from health food shops or amazon.

      Gymsum powder is a natural product. It is FDA approved to use in food - it helps coagulate the soy milk and make it more solid. You can improvise with vinegar if you like. I bought mine in an Asian grocery store under the spice section. You can also order it online on Amazon. Good luck!

      The pulp can be used but it doesn't taste that great as the milk has been extracted.

      There's lots of different recipes on UA-cam to use the pulp. I use mine to make tempeh starter culture.

      What's wrong with gypsum? It's cheap, and "major source of dietary calcium" (Wikipedia article on gypsum).

      I started with three cups water with one cup soaked soya beans. I ended with three cups soy milk. I hope this helps.
