My late wife wasn't a big fan of smoked meats, but she loved it when I smoked a meatloaf. Most of the time, I stuffed it with provolone. Still brings back great memories when I smoke one now.
Just found you on UA-cam this morning when looking for a pork loin recipe for the smoker. Have watched a few videos now and definitely subbed. Brother... your style making videos is just excellent. Zero fluff, great cadence, easy to follow, and I swear I can damn near smell it based on your expressions. The Wife just heard one of my "Satisfied food groans" and wandered in to see what recipe I was looking at, and wipe the drool off my chin. ;-) She said, "Man, his video style is great!!" Fantastic looking meatloaf, Ry. I really like the addition of the goat cheese. I'll have to try this on one of my Weber's. Also, I need that BBQ tray that you have.
Hi Ry, this is another great recipe from you. I was a fan of your meatball sandwich and this is another great way to use mince. I bought the stainless steel trays you recommended and works perfectly in my 1993 Weber. I have also used it for fish and vegetables.
Love smoked meatloaf, I use Q-Matz I bought from A-Maze-N BBQ company, they work very well too. I bought a roll of it years ago and cut into various sizes. They have come in very handy over the years. Your tray looks like it works very well too. Thanks Ry.
How do you do the coals? Do you light part of them up and let the rest of them catch later or light them all at once and adjust vents for the temp you want?
Hiii that looked amazing. At my butcher, in the Netherlands they have a bellpepper meatloaf, they slice it uo very thin, and we put it on a slice of bread, it is delicious, and I remember my father making meatloafs when I was a kid, kinda like this one, also to out on bread, sooooo tasty
Amazing smoked meatloaf Ry! I make mine very similar but put a dash or two of "W" sauce in the mix and add some bacon on the top! Nicely done! Enjoy and cheers!
I'm runnin to the store to get some ground beef, then fire-up the Smokin Joe, cause I'm making meatloaf today! Gonna hit 98° just north of that Hicksville you live in. Lol. As always, another great food recipe, especially for those of us on a budget. Thx!
I'm going to have to try this, that is amazing. I made my last one in oven in loaf pan and I had similar ingredients no veg, but it seemed like binders didn't hold it together. I know it would be better on the bbq.
Hi Ry and all, this meatloaf looks great. I made your smoked meatloaf with jalapenos recipe on my Traeger. We enjoyed it, but one thing that I was not keen on was how dry it was--I used a 90/10 ground beef. The next time I was thinking of using a higher fat content like 80/20. This one, by the looks of your video, looks so juicy. Do you think it's all those veggies (especially the mushrooms) releasing their water and/or the lower smoked temperature? My notes on my meatlof show I used 3.5lbs of ground beef and took a bit over 2 hours to reach 160. Last question, when you took it off at 155 and let it rest for 20 minutes, did you check the internal temp again and if so, what was it? Thanks for your help.

I have been smoking meatloaf for the past 20 years on the Weber Kettle Grill. That's the best meatloaf you could ever eat.

I cook on indirect heat on 1/2 chimney of charcoal. Control temp.with vents. I usually keep temp. around 250-300 degrees.

Hi! I do think the veggies aid in moisture. Didn’t check the after temp, just the pull temp.
