I just made two on Sunday. I used Dot's Pretzel crumbs, nice boost of MSG and flavor. Pre-cooked the veggies a bit, 275F with cherry chunks on the Grill dome, K-Chup Gochujang-based glaze, so good. Never baking a meatloaf again. Use a breadloaf lined with parchment to easily shape and move around the loaf.
This is going into my rotation! Making a few of these this weekend so we have delicious bbq ready to go after my son arrives in a couple weeks! Great idea!!!

Great idea - Smoked Brisket Meatloaf!! I tried this and loved it. I am the Pitmaster at "Uncle Beth's BBQ" in Middletown Ohio. We changed our meatloaf by smoking and adopting the pepper exterior rub and use Angus ground beef (We grind our brisket trim for burgers). Not exactly like what you made in this video but close. We also make one serving size individual meatloaf's at about 10 oz each. The change is well received by our customers. Thanks for the idea. Stop by and see us if you are ever in Ohio.
My gosh that looks sooo good!!!!! Too cold where I live to BBQ. I could only get my coals upto 150°C.... can't wait for warmer weather and then summer time to build a bbq Shack!!
I don't bbq as much as I would like to so I think I could do all I need using the spilled Fogo from Chud. That meatloaf looks readily good. Another winner.

The bit about the dog got me 🤣 love the shots of realism in your vids. Otherwise, meatloaf night was always a night I went to bed hungry but smoking it might change my mind after all!
Bradley, I made a smoked meatloaf on the grill tonight!!..Went for the brisket style meatloaf...Last night I took ground pork and blended in carrots, onions, garlic and red and yellow bell pepper that was pulsed down in a food processor...Threw some salt, pepper and smoked jalapeno chipotle powder into the blend...Added 2 eggs and a small handful of breadcrumbs for a binder...Tucked it all into a baking dish and let it sit overnight...Today, my 11 year old son/junior sous chef helped me get the Weber Kettle Grill set up with some charcoal briquettes, lump charcoal and some chunks of pecan wood..Set up my homemade metal heat shield and let the meatloaf smoke on a metal tray with indirect for 2 hours...Once the meat started to set up I was able to put the entire loaf directly on the grates for two more hours..Coated the whole thing in black pepper and salt for those last 2 hours....Cut the whole thing into sections and then heated them up in a pan with my homemade BBQ sauce...Served with sauteed vegetables that were heated up with salt, pepper, garlic powder, olive oil and a touch of butter....Thank for the awesome idea bro!....
Bradley, Nice job! I made it with ground turkey on the Kamado. I will have to make a meat loaf mix in our meat grinder at work,it's huge grinder wich will hold about 200 hundred Lbs. of beef in it, I used to make about a hundred pounds of seasoned ground chopmeat to make meatballs. though I never tried making smoked meatballs for sauce... awesome job!!

I can attest to the fact that vac packing the leftovers and reheating sousvide is perfect. Make sure you throw in a bit of the rendered fat when packing though. We do something we call poor mans brisket that is basically just a slab of loose ground beef seasoned with salt and pepper and smoked to 150 internal. comes out looking the same as yours, obviously without the veg and other ingredients. I use a vertical cab and put the loaf straight on the rack with a drip pan top catch the rendered fat, which we use to sauce the meat after slicing. Makes a fantastic burger as well. Leftovers are good with eggs too.

That's a great looking meat loaf! We tried a meatloaf sandwiches and Over-The-Top chili back in November and highly recommend it. The next time I will try your meatloaf recipe as I think it would really improve the dish!

Made this while I was home for MLK day and it is terrific. Took the advice and cut the amount of red pepper flakes in half. Very Very Good.
