    Hi Adam, Thanks for your comments, glad you like the vids! Good call, we will do a halibut prep as soon as we can. Got quite a lot on for the next few weeks, but as soon as we get a spare weekend (without rain!) we'll pick one up and produce the vid.

    Hello, yes the females will have more brown meat. Sometimes part of the brown meat (tomally) will be quite orange in colour - this is the roe, and is perfectly edible, just mix it up with the rest of the meat.

    I think you missed a lot of the purse meat. I don't think that the cuts you made are the best- it's better to cut the purse in 2 pieces first and then for each half, make a horizontal cut along the axis of all the joints to cut it into 2 top and bottom halves. this will expose all the meat inside. The 3 vertical cuts you made doesn't expose everything. I do like the leg-scoring method though. that is pretty cool.

    I have eaten all kinds of crab...but this Brown crab?? Brown meat?? It's just guts and digestive tracks and 'mustard' correct?? Im kinda grossed out a bit. I'm used to blue,Dungeness, stone crabs. Is this in England or ?? ... can someone enlighten me? Thanks!

      +Malina Mc prob just a regional (English) term- UK: brown meat, US: crab mustard, Japan: crab miso, China: crab paste for male, crab gold for female, btw, the crab mustard is hepatopancreas + eggs or sperm. also you prob noticed they say "purse", on the East Coast, it's called the cluster.

      @@csi4law trust me this type of crab is beyond amazing.
      The brown meat may not look good but it actually isn't the guts. It's mostly fat and calorie storage of the crab. Also includes the roe.
      The guts are actually attached to the face/mouth of the crab.
      Trust me if you eat the gut sack by accident you'll regret and know what you've done right away XD.
      I mean unless the crab hasnt eaten for a year looool.
      I've only seen this crab here on the canadian east coast like once every two three years the asian store will get only a handfull of them and sell them right away lol.
      It is on par with live snow crab and live king crab. Honestly the yield is incredible but just be carefull of the black leg hairs. They're nothing like a dungeness's hair XD They are legit needles.

      Well if you veeerrry carefully remove it, veeerrry delicately, you get lots of veerry beautiful rice grains of brown shit.
      And yes it tastes awful.

      Arshad Nifa No, it’s the crab’s internal organs, and, I think, the tissues that lay down the cab’s new shell annually. Easiest to think of it as the crab’s ‘liver’, and oddly, it does taste a bit like a crabby liver paté, really creamy and tasty.
      The crab’s digestive system is pretty simple, there’s a stomach which will come away with the mouthparts, then a thin gut which leads to the anus - very little room for sh!t to accumulate!
