- Here's a tasty vegetable soup featuring rutabaga. Rutabaga is a healthy root vegetable you can use like a potato, but with less than half the calories and carbs of potato. Rutabaga is like a larger version of a turnip, only sweeter. It's related to cabbage, and has a mild cabbagy taste, but not the "scary" cabbagy taste. Rutabaga is great in soups, and I love it simply seasoned and roasted in the oven. Like most produce, when buying rutabaga choose one that's firm and seems heavy for it's size, because that means it's not too old, or dried out. What you need for this Rutabaga Vegetable Soup Recipe
1 large RUTABAGA
1 ONION
2 stalks of CELERY
2 CARROTS
4-6 GARLIC
HOT PEPPER as desired
OIL for sauteing
CUMIN and FENNEL SEEDS 1-2 tsp (optional)
1 Tbsp GARLIC POWDER
1-2 Tbsp CURRY POWDER
1 Tbsp SMOKED PAPRIKA
SALT and PEPPER to taste
(I use water in the soup if making ahead of time, or ready-made broth if eating soon)
Also, it's soup; so add whatever else you want and cklean the odds and ends out of your fridge.
How to make a Vegetable Soup with Rutabaga
Slice the ends off the rutabaga and cut away the outer skin with a knife.
Chop rutabaga into large cubes, approximately 1/2" squares, but err on larger pieces.
In a large soup pot, heat oil on medium heat.
Add seeds and cook about 20 seconds.
Add garlic, hot pepper, and onion and saute for another 4-5 minutes.
Add in seasoning and mix well.
Add carrot, celery and rutabaga and mix well.
Fill pot with enough broth or water to cover veggies (use veggie or chicken broth instead of water if eating soup the same day, use water if sitting overnight), cover with a lid, and bring pot to a boil.
Reduce heat and simmer on low for 40-50 minutes until rutabaga is fork tender.

Great video - short and sweet (and humorous ;). Cleaned out my fridge. Old rutabaga I almost threw away but cut into it. Salvageable. Cut it up and soaked in water overnight. Surprised on how much water the rutabaga absorbed. Cooked it while looking for recipes. Glad I did. Used fennel seed and ground some coriander seed a bit. Lovely contribution. Smoked paprika gave it a nice depth. Added dried jalapeño/cilantro mix. Great idea I would not have thought of w/o your video. Added a splash of pickle juice. Used all the other standard veggies. Added a cup of canned great northern beans. Would add more next time. Added some home canned onion broth, chicken broth and a bit of pork broth from freezer. It was oh, so yummy!! Shared with Condo neighbors. Thank you!
Great recipe especially for diabetics such as myself who doesn't like eating potatoes because of the starch, looks yummy!

To me, the rutabaga is the king of root veggies. hat you have created here is my favourite way to eat them. Of course, smushed rutabaga with butter and black pepper is always appealing.

we've been souping it up a lot lately, but now that we're back in Florida for a bit, we're gonna have to retire our soup dishes for a while...I don't think they're not gonna pair well with this humidity (which I have not missed)

A local supermarket has them on closeout for $.27 a can! If I like them, I will go bck and get some more!

we were just out at a Salvadoran restaurant and had a bowl of beef soup that looked like a scene from a horror movie. It was full of gristle and fat and and tripe and tongue and bone and it was DELICIOUS...definitely a vegetarian's nightmare, though

Carrot cake recipes, i once substituted beets and you couldn't tell the difference....I wonder if you made one with a rutabaga, i bet any root vegetable would work....Maybe you could try it, i'm super busy getting ready for the lobster season....Rutabaga cake w/ cream cheese frosting!

I really think the sugar would hide it...Try it and if it don't work give it to the homeless shelter and don't post it....I almost bet it would still be good....The recipes of the world only came from trying new things without fear of failure!

Helen McGuire--They look almost exactly like what we call turnips in the U.S. The turnips here are a little sharper tasting like a radish. We don't eat rutabagas very often except in Cornish pasties and stews.

1 potata 2 potato. I can't do the Rudabaga. Couldn't get a knife through it. If someone ever gives me one I'm using the reciprocating saw.

it does make a difference how you cut a rutabaga....it cuts a lot easier lengthwise with the core, but I usually never think about that until I'm halfway through cutting it the "wrong" way across the core

not exactly the same thing...a rutabaga is a cross between a cabbage and a turnip...kinda similar in appearance to a turnip, but a rutabaga is generally larger and has a yellowish tinge to the white part; it has a milder flavor with a hint of cabbage taste

I have to say the soup looks good on the video.... However, The taste is horribly bitter and I tried adding a little sugar and it did not help and at the end of the day after eating just one bowl of the finished product I have had gas like you wouldn't believe so it's a thumbs down for me
