    I was very skeptical they would replace potatoes BUT I tired it. I placed in micro for 5 min ,peeled off and it cut super easy. I cubed and fried in a little bacon grease and they were awesome! Some butter would be great too but the bacon gave it a great flavor. cook it like shown in oven or air fryer as well. You can also boil , place in processor add a little butter/ cream and create mashed taters It's my new low carb potato replacement.

    Microwaving for 5 minutes softens the skin. Easy P easy!

      Yeah, I need to try this. I already do it with butternut squash, I bet it would work with this too. I had the hardest time cutting it and shortened it on video so you didn't have to watch me struggle for so long, haha.

    Wow! This does look so delicious. Up here in the UP of Michigan we have rutabaga often. I peel it with a vegetable peeler. I always put rutabaga in my boiled dinners...chopped in our pasties...boil it with potatoes (which I used to eat a lot!) and mash them together...and serve it mashed with butter as a side dish. I'm looking forward to roasting it this way! Thanks.

      Yep, I used a mix of the knife and peeler. I found the knife was easier for the rings, but the peeler easier for the ends. Both work, though. Mashed sounds delicious, need to make that soon!

      In Sweden we also add carrots when we mash them, and according to wikipedia some even add parsnip. Ginger could also apparently be added.

    I'm glad that the rutabagas/swedes sold here in the UK typically aren't waxed, cos they're honestly pretty quick and easy to prepare. Hers looked really difficult to peel :P It's a delicious veg, and super cozy. Even the cooking liquid after just boiling them with some salt is delicious.

    I also nuke mine for 5 min and then in my pressure pot and then mash along with butter, a little maple syrup and heavy cream. Simply delicious!!

    Great survival crop if you live in a northern climate. Somewhere in between carrots and potatoes.
    Im swedish by the way. And if you live in canada or Alaska this might be worth a try to grow. It's not bad at all.

      I'm sure it would taste good! Just be aware of contains sugar, cornstarch, and preservatives, if any of that is a factor for you. If not go for it! :)

    Poke couple of holes and keep it in MW for a minute or two. It applies to squash varieties too. Then it becomes easier to remove the skin.
    You can also boil it like potatoes.

    Well I guess I’ll try this one. I miss potatoes, but I am enjoying the effects of my low card diet, so I am committed. I’ve been roasting radishes and I really like them cooked, not a fan of them raw tho. It’s strange how the taste changes when cooked. I’ve never cooked a rutabaga before, so this will be interesting. 🤔 Thanks for the recipe! 😊

      Hi Janie, I’ve never had cooked radish’s. Is there any thing I need to know to do that? I’ve gone keto so I’m always looking for low carb recipes:)

      @@alleyoop5185 Hi Alleyoop, If you are able to buy Maya Kramph’s cook book I would highly suggest that. The roasted radishes recipe comes from her book. But basically I roast them like I did my potatoes. Cut medium size radishes in half, toss them with avocado oil and whatever seasoning you like, ie: salt, pepper, garlic powder, paprika etc…. Mix until well coated then put them on a foil lined baking sheet in a single layer. Roast at 425° for 8 to 13 minutes, then flip them over and roast for another 8 to 13 minutes. Mine always turn out soft I can’t get them to crisp up, and the shrink during the cooking process. They are still tasty tho. And they look like little “red potatoes “ so my brain thinks I am eating potatoes…..lol 😉 Another cook book I found to be very helpful is Low Carb Yum by Lisa Marcaurele. hope this helps. Good luck.       @@alleyoop5185 also try the daikon radish. It is a great potato replacement in stews and soups. I love it and it has a neutral flavor so it takes on the flavor of the liquid you are cooking it in. I haven’t tried it roasted or mashed yet.

    I put the rutabaga in the microwave for 10-12 minutes. The wax melts off and the rutabaga is partially cooked so it is softer and easy to cut. I usually mash it with butter and nutmeg. Would like to try this recipe but would need to reduce the cooking time after doing it in the microwave. Any idea how much time to reduce?

      That sounds yummy! I haven't tried microwaving it because I wasn't sure about the wax, but you probably could. I would poke with a knife and microwave for 2 minutes just to soften the skin, which is what I do with butternut squash before peeling it to roast. Then the cook time in the oven would be pretty similar, probably just a bit less.

    Do they cook to a soft texture after cooking ? I tried Jicama but it had a rubbery texture to it, not good

      They are fairly similar, but rutabagas are a bit sweeter and have a stronger flavor.

    We call them Swedes in the uk. I haven't tried it like this but will make it tonight. I just happen to have one in the fridge. I just get my husband to peel and chop it lol. Some times I steam it with carrots and then mash them together with lots of butter. They also give lots of flavour to a beef/lamb stew. Its a really versatile vegetable.

      I think it comes out more starchy-tasting than radishes. And obviously doesn't have a radish flavor.

    Always add a bit of mace to any rutabaga recipe, takes away the bitter taste - not all rutabagas are sold with wax on them, especially in Newfoundland, never did I see a waxed rutabaga probably because they eat A LOT of rutabagas - mashed rutabagas with butter, mace, salt and pepper is the best

    I've tried cooking a rutabaga 2 different ways. The taste was so strong and not palatable. Could it be that some states get better rutabagas based on where they grow? Mine tasted like dirt smelled.

      That's very possible, I'm not sure! Rutabaga definitely has a stronger flavor than potatoes, though.

      Rutabaga is much lower in carbs overall than, say, potatoes, and it’s also a resistant starch, so most people on keto can enjoy it in moderation.

    I've been making those every week for the past two years. They are good, but, to me, they taste a lot different to potatoes. The texture is similar to potatoes, although they are a bit more fibrous than potatoes.

      Agree they are a bit more fibrous but in my opinion pretty close. The flavor is stronger though, not sure how else to describe it but doesn’t taste similar to Brussels sprouts to me like another comment mentioned.

      @@WholesomeYum Maybe "earthier" than potato? To me, it's like a more pronounced, ("stronger") russet potato type flavor~ I love them for the occasional side. I've noticed that adding some finely minced or grated onion makes them even more like potato-ish, like a hashbrown breakfast dish in a way. Very versatile really, yet the way you prepared them here is my favorite as well.

    Rutabagas are good (my favorite way is as hash browns with a shredded carrot) but they taste nothing like potatoes

      That sounds like a delicious way to cook them! To each their own, to me they do have a potato-like texture when roasted this way, just a slightly different flavor which I mentioned. :)

    Idk I’m skeptical. Might have to try it. I tried turnips once like this and never again. Wasn’t a fan. It’s like eating low carb noodles and expecting them to taste like the real thing. Not gonna happen but I will try anything once. Now let’s see if I can find a rutabaga.

    Olive oil does not withstand high heat, definitely use the other suggestions, for example grapeseed oil or avocado oil, or just toss in vegetable broth and place all of parchment paper instead of oiling a sheet (for those wanting to avoid the added fat), they will brown without oil. Other than that, it looks healthy and tasty. I bet they'd be great in the airfryer also.

      Olive oil has a smoke point of 410 degrees F, so it’s safe for the temp of 400 in this recipe. The recipe itself will work with any heat safe cooking oil, though I personally avoid seed oils. Olive or avocado oil would be the healthiest options. :) I have not tried it in broth but broth likely won’t brown the same way that oil would - let me know how it goes is you give that a try. And yes, air fryer would also work!

      Noneya- it is still yum, but you are right. It's similar to potatoes but NOT the real thing. It's like when I vegan makes a tofu dish and it's similar to meat. It is not meat and your can't kid yourself, but it's still yum

    50% white potato, 50% Rutabaga...mashed potato is awesome.
