Thank you Pete, first for dedicating this to Roger, that means such a lot to us all. I'm so pleased you liked the bread idea and I'm also glad it worked for you too! 🙂. Thanks also for the mention of the channel. You asked how we all cook mince and I have to say I would cook it in a similar way. But sometimes, I add 1/2 teaspoon of sugar (something my mum used to do), plus 1 teaspoon of malt vinegar.
Please accept my condolences and I will keep you in my prayers.
I'm honoured to be able to use my platform to honour Roger, he was a much-loved and highly respected member of our foodie community. You have admirably decided to continue his legacy and you are doing a great job of it. I trust and hope that many of my viewers will rally to you in support. I was taught to start the mince off in butter here in Northern Ireland. We back then learned from Gran and Mum .

Agree whole heartedly, if a recipe is produced today, in less than a week
there'll be 100's of versions out there. Having said that, when you were
plating up, we both agreed that it looked like a deconstructed Shepards Pie.
Now, American style. Browned, seasoned, onion and garlic, bottom layer.
Middle layer would be your veg layer of choice. Top layer mashed potatoes.
All in a deep casserole dish, in the oven until potatoes brown.
Now, stir that mince beef up all together with the potatoes on your plate.
Stir that layered pie all together on a plate,,,
same with a cottage pie. Whatcha got? Best plateful of comfort food on
earth.

I saw a version like that on a Korean food channel. I guess it arrived there via the US military stationed there and struck a chord with the locals. It certainly looked good. Food tells its own stories, it travels the world and gets tweaked and changed to the local palate until it becomes their own. Best regards to you both, and it's lovely to see you back my friends 😊

Wow that looks so good, I would normally make my mince exactly as you’ve done same ingredients minus the bread.
I think I’ll try the bread when I do this next time because it thickened up so nice.
Fish sauce also new ingredient so I’ll definitely add that too.

Hello Pete, when you say overnight plus an extra hour for the frozen veg the next day, how long roughly was that? 8 hours, 12 hours or longer?
The slow cooking time could be anything from 8 hours on with it set on the low setting. These slow cookers were designed to have a meal ready for you after a whole day's work plus commuting time. I left this particular one on all night and all day, about 19 hours in total. I wouldn't want to leave it cooking for much longer than that though, say 22 - 24 hours max.
