New subscriber from Australia. I decided I was going to make a steak and mushroom pudding, only cos I haven’t got kidneys but I haven’t had anything like this since I was a child an$ my Mum made it but she stopped using suet years ago so this will be my furs5 attempt at making suet pastry, I just hope it tastes as good as I remember. Thanks for your video. Looking forward to your next video.

In SA you are spoiled for great meat. I had a SA butcher when I lived in the south of England; his steaks, biltong and sausages were amazing, and the kudu meat just blew me away! I can imagine this made with kudu meat and it makes me drool 😋

Hi, Pete, as you know, my mum was from Liverpool and married my dad, an American. This is one of the foods she made in my childhood, and oh, did we love the steak and kidney pudding. You've really taken me back!
By the way, do you have Tart Cherry Juice in England? If you take a shot glass or so of that every day, you won't get the nasty crystals setting up house within your metatarsophalangeal joint. And if you forget and end up with a bout of gout, drink an ounce or two every hour during waking hours. It's a magical, non-precriptive, tasty, painless remedy that really does work.
The juice is not inexpensive, but it's a lot better than hobbling around until the gout resolves. It's important to take it a bit at a time, and not just guzzle a huge glass of the stuff.
I hope this helps you (and the others in the comment section) who suffer from gout.

Sorry to hear you have gout; not good when it flares up-or anytime actually. Very nice crust you made. Yes lots of pepper! I've never had this before, looks good so far. I would have thought there was a bit of sauce or something like that in it. Very interesting cooking method! The steaming pie looks tasty, flipped even better. Oh that serving looks delicious, now I know why there was no sauce in it before cooking. Pete, I have got to make this! What a delicious pie and so meaty. Perfect for the cold weather just around the corner. Keep up the cooking!

For my own personal very complicated health reasons, I tend to eat more vegetables than meat dishes without totally leaving out some meat proteins, hence my question to Pete as to mixing in some vegetables that would be easy for me to digest, and I don't eat the American pot pie. I am in no way trying to change an authentic British dish especially being a pretty decent cook myself.

I get gout too- normally my left index toe (is that a thing? Should be!) which gets bigger than my thumb, and right ankle. Every once in a while I think sod it and decide it's worth taking the hit though. I do love offal!
This looks fantastic and I wish I could get my pastry to come out as well as yours as it's always too thick Going to give it a go this week and be a bit braver using less!
The amount and thickness of the pastry is key, trust your instinct and you'll be fine.
Yes the big toe is where I get it. Fortunately I have kept it at bay for a couple of years now.
Death by Cocktail: I occasionally get gout and 'cure' it by eating black cherries??. I got the info from online somewhere, and it works! Good luck with the gout and the wonderful steak pudding.

This looks very good Pete, but I have a question. If one Can't source
the Atora shredded beef suet, is there a reasonable substitute that can
be used? I checked out the link you posted from Amazon, and in reading the
Q&A section, some people apparently received empty boxes. as they source
it from a company in the UK, and it's illegal to import beef products to US from
the UK.
Also, what ingredient makes it shelf stable?

All good questions. Beef suet is the fat only sourced from around the kidneys, it is naturally shelf stable once cooked, ground and dusted in cornstarch. Unfortunately there is no substitute, it has to be beef suet. Beef tallow is such a poor substitute as to render itself useless. There is a veggy version of Atora which will certainly bypass the BS rules on beef product imports. That's just pure protectionism IMO.
@@LazyCookPete For any Australians who might be watching this, (I'm looking at you, @PaddyJoeCooking 😉), you mightn't be aware that we can't buy Atora Beef Suet in Australia, either, (but we can buy the Atora Vegetable Suet), and from what I've been able to find out, this restriction dates back to the UK's BSE problem of a few years ago. For a long time, Beef Suet was only available from local butcher shops or online, (at incredibly inflated prices) from local "boutique" suppliers. However, there is now a local company, called *Tandaco,* producing Beef Suet, along with Vegetable Suet, and it's available in all our local supermarkets. Hope this helps... 🙂

Not really, butter, tallow, lard and other fats are poor substitutes. There is a vegetarian version of Atora that works well though.
Question: What size pudding basin would you recommend as a standard? I am in the US and want to buy one.
The one I used is 2 British pints or 40 fl oz in freedom units! 2.5 US pints or 1.15 litres. I hope that helps.

😱😱😱gout!!! Painful isn't it!! Thanks for the heads up about kidney as didn't realise that brings it on.
Uric acid is the culprit, so red wines, fortified wines and kidneys are off the menu for me.
2 cups of flour is around 260 grams but you've quoted 473 grams further down...that's a big difference. You've also said 70 grams suet but most recipes I've seen say half weight in suet to weight of flour. I don't want to waste my ingredients so are you sure these are correct?
