    I love how everyone at the Test Kitchen goes to the effort to simply explain the science behind what's happening. It actually really makes a lot of cooking seem less daunting knowing what kinds of things are going on. Of course couple with charming metaphors and descriptors.

    Carla is my 2nd favorite BA chef, after Claire, of course. I love her weird anecdotes. And sge really explains the technique of cooking. You can tell she's an old school chef who learned from the best.

    As someone who worked at Dairy Queen (even if it was 15 years ago), I can confirm that the Dairy Queen peak/swirl is definitely a thing and we were forced to do it on every single cone or we got in trouble lol.

    Hey BA!
    Long time listener first time caller here. Love everything that y’all do and I wanted to suggest an idea for a new show....BA staff cooking in their own kitchens (or just realistic small kitchens).
    It would be great to see how they flow through recipes with limited space (setting up muse en place, pantry organization, non-industrial grade kitchen appliances).
    Just a thought.

    With all respect for the famous chefs in the world but Carla is my favorite she is the best cook and teacher I've learned cooking alot of dishes that I thought I would not do it anytime in my life ..Her approach is very easy that my brain absorbed it so quickly like a sponge ❤️❤️

    Thanks you for justifying the way I separate eggs! I've always found I can get a more perfect separation, faster and more reliably, by using my hands. I also run a thumb around the inside of the shell to get that last bit of white! People are so afraid that egg yolks will burst like a bubble as soon as they touch them... But I manhandle my yolks and pull off the last thickest bit of white detached and they're always fine.

    I tried the recipe, it was delicious, although I didn't have any cheese so I swapped in some pesto that I diluted with some olive oil. Great texture with the light eggs.

    I love Carla, any time there is a video with her I click immediately. I got the Jean Nate reference, my grandma bought me a huge bottle of it for some holiday when I was a young child in the 80's... This looks so yummy! I make a version of a soufle omelette with lemon and blueberries, I start mine on the stove and then finish in the oven so it sets top and bottom (I hate soft egg)... will definitely be trying this version!

      Looks like it's discontinued by the manufacturer! Rite Aid still sells the splash/mist though. (Used to sell the powder too).

    That is a nice looking omelette and I love them so much since being introduced to them after getting into the Air Force. Once I ate one I was hooked and have been eating them since then. I thank you for showing us how to make one the correct way, Carla.

    This helped me a lot actually whisking the whites till peaky helped improve the consistency of the omelet. I used to put the eggs on my mixer but it wouldn't peak probably overmixed. Resulting in a flater batter by the time I brought everything together, making it more omelet and not too much souffle. With this recipe I managed to get that ratio and have great omelet souffle. Thanks alot!
