- Join Carla Music in the Bon Appétit Test Kitchen as she makes a soufflé-style omelet. Your arm may get tired during all of the whisking, but make sure the egg white peaks are firm enough to stand up on their own while still having a nice shine to them!

ABOUT BON APPÉTIT
Bon Appétit is a highly opinionated food brand that wants everyone to love cooking and eating as much as we do. We believe in seasonal produce, properly salted pasta water, and developing recipes that anyone can make at home. - Навчання та стиль
I love how everyone at the Test Kitchen goes to the effort to simply explain the science behind what's happening. It actually really makes a lot of cooking seem less daunting knowing what kinds of things are going on. Of course couple with charming metaphors and descriptors.
It's perfect for me because I learn better when I understand why. I never mess up a process or cut corners once I get why it needs to be done that way!
Yeah, you know, when you crush garlic it's like a 2 part epoxy. And then it releases all that allicin
Beviedev, What does daunting mean?
john alt scary
That's because they are actual food scientists vs just being cooks or chefs. These people are some of the best in their field.
Carla on whether to do cheese: "You don't have to love yourself."
it's better with cheddar!
Came here to post this same quote
Reverse psychology from Carla: ALWAYS DO THE CHEESE. ALWAYS LOVE YOURSELF.
@@LiqnLag Omg YES! I love Cheddar
But I'm allergic 😭😭😭
Carla could literally boil water and make toast and I’ll still watch. She’s seriously a gem.
Layna agree
She’s awful. I hope she gets fired
agreed! i love her!
Her smile is so wonderful! It makes me happy
Liv Lenon you are right. Good satire. She has an ugly face and an uglier personality.
"you don't have to do the cheese, but ya know...you don't have to love yourself"
I CRACKED UP SO BAD 😂😂😂😂
BA I want to buy this on a mug.
I want this on a shirt, with an illustration of egg soufflé
best advice EVER! jajajaja
I died omg this is the best comment ever.
"They get to go do their own thing, and then they come back and everybody's greater for it" I'm here for Carla dispensing life lessons while making delicious omelet soufflé.
Same
I didn't expect to tear up while watching her separate an egg, but here we are
I really like having more chat with the camera crew. I think it adds something nice to the videos
except Vinny, screw that guy.
angel102ify Vincenzo! The best!
angel102ify ;n; I miss Vinny
They often do to remind or clarify stuff but they cut it out so only the host replies
A) Digging the bangs (that’s “fringe” for our friends across the pond).
B) The most Italian thing I’ve heard in weeks? “I have to stop whisking, because I have to explain this with both hands!”
Anyone who knows the Ultimate Warrior knows fringe
Carla, that was me and my friends that you seen in the Def Leppard gear. We went to The Today Show and were on our way back to Brooklyn for the ceremony that night!
i knew exactly what she meant by the dairy queen peak...
And what she meant?
I did too and I've never been to one of the locations.
me too

The people working for this company are so EXCELLENT. Literally all of them are so wonderful and fun to watch. Carla, I effing love you
“it’s not peaking, just flopping”
ah yes, the title of my autobiography
😂😂😂
"I'm not crazy, Tommy where'd you grow up"
😂😂😂
Do you ever just feel happy from seeing Carla happy?
nah, but I'm glad someone's happy
Watching Carla cook is like watching a close family member cook she's so cool.
she is such an amazing teacher!
i literally love the language that carla uses. it's so cute/funky
It's funny because it's almosot the same as Brad's
Carla is a goddamn delight!
Garth AllTheDogs her curls make me weak at the knees 😊
Vicariousleigh yeah I hope she gets fired too
@@gregoryplanks8336 this is the second time I've seen you reply to a comment about how much you hate her. Did Carla murder your family or something?
Carla is my 2nd favorite BA chef, after Claire, of course. I love her weird anecdotes. And sge really explains the technique of cooking. You can tell she's an old school chef who learned from the best.
As someone who worked at Dairy Queen (even if it was 15 years ago), I can confirm that the Dairy Queen peak/swirl is definitely a thing and we were forced to do it on every single cone or we got in trouble lol.
Best thing I've heard in my entire life is Carla saying "oogy" and "woogly".
Hey BA!
Long time listener first time caller here. Love everything that y’all do and I wanted to suggest an idea for a new show....BA staff cooking in their own kitchens (or just realistic small kitchens).
It would be great to see how they flow through recipes with limited space (setting up muse en place, pantry organization, non-industrial grade kitchen appliances).
Just a thought.
Again, love what y’all do and keep it up!
Pretty sure there’s already a video of Carla cooking in her kitchen.
"Hi this is Andy, here today in the a Bon Appetit GUEST Kitchen."
Let's be honest most of them probably have industrial grade everything except ovens in their houses
Mise en place
Muse en place
Instructions unclear. If you don't have a quick anecdote about Def Leppard to tell, how do you get the whites to soft peaks?
I feel like Carla is my eccentric Aunt that teaches me all the things my mom didn't teach me about cooking.
With all respect for the famous chefs in the world but Carla is my favorite she is the best cook and teacher I've learned cooking alot of dishes that I thought I would not do it anytime in my life ..Her approach is very easy that my brain absorbed it so quickly like a sponge ❤️❤️
Love how I was confused on the rock and roll music at the beginning but it came full circle & I’m thankful for it now.
I didn't know who Def leopard were, but I was happy for Carla that she had a nice memory on the train
My grandmother used to separate eggs the same way Carla does. I feel validated.
I thought everyone did it that way...
All grandmas do. The hands are the best tools in the kitchen.
I like the way she explained it with the bubble bath
Carla is soo wholesome
Jean Nate *and* Def Leppard. You rock on, my 80's sistah! Rock on. (And that was a lovely omelet souffle too)
The "Jean Nate" reference cracked me up. Yes. I'm over 50...lol
I laughed too. And I am definitely not 50 yet.
LOL! I remember those commercials! ❤️
Loved the tutorial :)
This is going be my breakfast for tomorrow 💃
Thanks you for justifying the way I separate eggs! I've always found I can get a more perfect separation, faster and more reliably, by using my hands. I also run a thumb around the inside of the shell to get that last bit of white! People are so afraid that egg yolks will burst like a bubble as soon as they touch them... But I manhandle my yolks and pull off the last thickest bit of white detached and they're always fine.
I tried the recipe, it was delicious, although I didn't have any cheese so I swapped in some pesto that I diluted with some olive oil. Great texture with the light eggs.
That sounds great as well! I like your riff
Ohhhh that's a great idea! I'm in exactly the same boat- no cheese, but tons of pesto. I'll give this a shot tonight!
I see your Jean Nate, Carla. You are my FAVORITE BA'er and moments like that solidify that love, lol.
Of all people at BA, I wholly expected Carla to call this a Souffelet.
You have a cute profile pic but I thought your name was Lil Cognac at first! Now I want a stiff French Connection!
Kethertomalkuth Orchard wtf
Amazing! Made this with my 3 year old son and he loved the process and the finished product!!! Thank you BA for inspiring us to make these wonderful meals!
Carla, your videos are so encouraging to me especially right now, thank you for being you. :)
That little chuckle at the end was great!
Love the Jean Naté mention, the Def Leppard anecdote and this insane floofy omelet. Carla is my favorite!
But I want an eggroll video.
you will get your eggroll video WHEN YOU FIX THIS DAMN DOOR!
@chris same, fam
Nichole scott whut
I made this for my mother the morning of her birthday and she has not had eggs any other way since. She talked about it to everyone who would listen and even watched me make it again to learn how! It made her so happy and I'm so grateful to have found this for her. Thank you!
I love this video because not only does she make and show her mistakes, but she also explains what the mistakes were and how to recover from them.
“You don’t have to do the cheese, but you don’t have to love yourself” 😂🤣
that looks so good omg Carla is an icon😭💘
The analogies made this process a lot more understandable. Thank you!
Rewatching before I try this for breakfast this morning!!
I am going to try this. She is so tough New York, I mean that in a good way this time.
Mad props on your egg separation method. You made me feel better about my technique.
And yes, that is a Dairy Queen peak.
Love the metal track in the beginning! Makes me laufff
Please continue doing a great job by explaining so well. I feel like I'm taking a very nice and easy to understand class. Also, a lot of you have a great sense of humour.
Now I am going to add "oogy" to my culinary terminology!! Love it!!
OMG I need to make this too. Also, lol to Jean Nate. AND the Dairy Queen peak.
You gotta love Carla, she's such a delight! One of my favourites from the BA kitchen. Our cinnamon roll ❤️
This was so much easier than I thought. And it was delicious! Thanks Carla 👍
I love these. I don’t make them often enough! Breakfast tomorrow is sorted, many thanks for the reminder.
I'll admit it. I laughed at the Jean Naté comment. 😂
It's hysterical because I legitimately just got out of a bath using Jean Naté (thanks mom, for that stocking stuffer😂).
I knew exactly what she was talking about. I didn’t know how to spell it to make the comment though.
I knew 😏
The editors usually add explanations.... but I like that they left that easter egg untouched. It's like she said--those who get it, will get it.
I love Carla, any time there is a video with her I click immediately. I got the Jean Nate reference, my grandma bought me a huge bottle of it for some holiday when I was a young child in the 80's... This looks so yummy! I make a version of a soufle omelette with lemon and blueberries, I start mine on the stove and then finish in the oven so it sets top and bottom (I hate soft egg)... will definitely be trying this version!
Love that Carla always recommends doing everything with her hands.
Just made this, best omelette I've ever had. Definitely would have again.
Carla is the best, I mean, who else cooks with "rocking" fingers? Ha!
Love ya girl!
I love the personalities; and the expertise!
Carla is very detailed and visual with her teaching, I feel like I actually learned how to make an egg soufflé today!
I have never seen a carla video before this, but this is great
Dude... Carla videos.. watch them.
"You dont have to do the cheese but, you know, you dont have to love yourself"
We will add cheese, we love you Carla
GoPostal as someone whose favorite food is cheese , I loved this line lol.
"You don't have to love yourself" i loved that.
Just made this and it is amazing. Thank you Carla!
Making one right now. It's beautiful!!! 😭
Kira Greener 🤯 Stop typing! It’s burning!
Omigosh! Boy for once am I early :))!! Love you Carla! 🙆🏻♂️❤️
I love watching her hands. Watching Carla is like watching my aunt cook, when she was younger. My father’s family are full blooded Sicilians, if the hands aren’t moving, something isn’t right.
Just made my first ever omelette soufflé and it was delicious!!! thank you for showing us how to do stuff like this!! It gives us the confidence and the know-how to try new things
I like how she says "it's more hygenic to separate the eggs with your hands" as she is doing so with rings on her fingers. And then the next shot, the rings are magically gone.
Dinner tonight!
(Also, I loved Jean Nate. Splash!)
Carla, you are my favorite. You make everything right and then you make everything even rightier! You are the top in chefs and the chef of all tops. I heart you 4 ever.
All of Carla's analogies are perfect.
Perfect DQ peak and rock fingers ! 🤟🏽
It was like two seconds away from burning but I ain’t mad I like my omelette crispy
Carla seems to be close to burning stuff.
close?
@@BLacroSse2 Especially when you compare it to when she cooks french omelettes with the beautiful Tiffany Young she mentions any brown meant the eggs were overcooked. Wth happened here...
@@RagnarokCo She says in this video that it's okay to get it a little brown unlike a french omelette.
It also is probably trickier to cook while teaching and filming!
Very good!! I whipped the whites really well and the omelette was so fluffy!! Thanks for the detailed instructions
I haven't had a whisk in years. Getting one this morning for the sole purpose of making this epic omelet. Thanks, Carla!!
I got the Jean Nate joke! I’ve been searching for the powder for my grandmom and can’t find it anywhere! 😂
Looks like it's discontinued by the manufacturer! Rite Aid still sells the splash/mist though. (Used to sell the powder too).
I play carla in the background while i'm doind something else but when she mentioned "Jean Naté" I had to look up.
I GOT THE JOKE CARLA! I GOT IT BABE! Later for them.
😂😂😂 Totally got the Jean Naté thing..... My mom used that stuff constantly when I was growing up! I laughed for you, Carla! ❤️
I watched this last night. I bought a whisk. It was easy and delicious! Thanks Carla appreciate the new way for me to enjoy eggs!
That is a nice looking omelette and I love them so much since being introduced to them after getting into the Air Force. Once I ate one I was hooked and have been eating them since then. I thank you for showing us how to make one the correct way, Carla.
Oh how I missed our very bubbly Carla...
Carla: Souffle omelets are easier than normal omelettes
Also Carla: proceeds to make a 10 step omelette.
Also me: now I want a french omelette.
I taught my summer camp kids how to make egg soufflés from this video. We had such a blast whipping then egg whites and cooking them. Middle school kids were really appreciative. Thanks Bon appetite
Tried this today and it turned out amazing even though my egg foam wasn't all that great. The cheese is really the metaphorical cherry on the cake, it's so good!
The fact that she holds her silverware continental style has me shook
Maybe her Italian mamma taught her the continental way.
Drue Ashton
Nah, she transfers her fork to the right hand for popping in her mouth - that's American style.
I've only ever separated eggs this way & always thought all the other hacks & methods are so weird.
I made this following your video. So amazing! Thank you. I'm 17 and still learning to cook and this was delicious.
I love Jean naté! I used to buy it for my grandmother all the time. It smells amazing!
I get you, Carla. DQ, Jean Nate’, “Calgon, take me away!”
Melissa Quinn 😹
No worries, Carla. Everyone who ever worked at a DQ knows exactly what you mean.
I love Carla! I bet she's so good at teaching kids. ☺️
I LOVE Carla's analogies!
I just made this and was gonna take a picture of it but it was just so delicious I ate it all before I could 😂😂
Ahahaha... I have an album full of food porn pics, after I've taken a few bites, or really the leftovers going into tupperware
I gobbled mine up too! I usually have a hard time finishing 3 eggs. Not this time!
Carla is the best instructor at the BA.
This turned out so yummy! Thanks Carla!
Well done Carla. You are so good at making things like this easy and exciting.
Im gonna make this for my bf for Easter morning!🍳🐰🐣
cassandra sotos aww cute! Hope it turns out well!
"It is easier to use your hands, and in a lot of ways, more hygienic" *wears ring
Fun omelette though!
MOST Excellent!! So THAT'S what you call what I've been making all these years.
This helped me a lot actually whisking the whites till peaky helped improve the consistency of the omelet. I used to put the eggs on my mixer but it wouldn't peak probably overmixed. Resulting in a flater batter by the time I brought everything together, making it more omelet and not too much souffle. With this recipe I managed to get that ratio and have great omelet souffle. Thanks alot!
