      Do not use metal or plastic. Metal and plastic are a no no.

      Madam, here in South India, very hot now, so fermentation should be for a day???? N then strain n refrigerator ....is that rt?

    Very thankful for this good advice. We do not get black carrots here and therefore I will try usual carrots and beetroot. However, I will try to get black carrot seeds to plant in on my own.

    Please always provide the weight of the ingredients in addition to the quantity, spoons etc. This will make things more precise and ensure better results when we try to replicate it at home. Especially when in this recipe we are going to substitute black carrots with beetroot and regular carrots, it would have helped a lot to know the weight of the black carrots in your recipe.

    Nice, easy and simple. This will be my new addition to my many probiotics, kombucha, coconut yogurt, kimchi, Kefir, idli, sauerkraut, pickled turmeric and other pickled vegetables. Use filtered water for any ferments.

    I also make this every winter , but I make this in earthen pot and place it in the sun, it’s super tasty and healthy as you said .

      I make kanji in just march end and put kanji to outside warmer place in day time for 3 to 4 days suuny for only 1 to 2 hours is this right process ,, ans pls

    I made kanji only using regular carrots. It was really awesome. We can make Kanji with radish and turnip also.

    Does it help to have regular bowl movement 100% to cleanse the gut?
    If it does, do we have to drink it every day?

    Will be adding mustard seed to my beet kvass. I use beets, carrots, garlic, jalapeño (or hotter) and a bay leaf. Drink 4 oz. thur out the day, everyday.

    We get b12 from a nonanimal source? I am happily surprised to know. I love listening to you. Please would you do more on veg sources of b12? So many of us are deficient.

    I am a Sindhi. We sindis make this little differently. We take carrot ,turnip,gingerand green garlic and some time cauliflowers. We just half boil the vegis and make like you made . But some time we take raw vegetables too. we eat those vegetables with water.

    Well! You did not mention: drinking how much quantity per day is optimum.
    -when is the right time to have it -emty stomach, with meals or after meals.
    -within how many days should the drink be consumed?
    -would the drink get spoiled (in how many days) outside refrigerator?

    Thank you Madam for this video. I have subscribed and am watching many of your talks. I have one question. You claim that Kanji has Vitamin B12. I hope it is correct, as my wife and i are not only pure vegetarians, but also vegan so we do not consume dairy products. For vegans getting sufficient B12 is a problem, so most people supplement with vitamin pills. Of course I prefer food sources to the pills. Can we be certain that kanji does, indeed, contain B12? What are your sources of information for this claim?

    Wow thank you for sharing great ful thought but need information I have put cabbage, carrot, ginger, brocoli , capsicum and pinch of green chilli as part of kanji preparation . Does this method go good and the mustard preparation is it requires here too . please advise

      Usually yes, but ask your doctor. Fermentation reduces sugar in fruit in veggies as it is the main source of food for good bacteria

    Madam, I have made kanji four times so far. Every time everything was fine, but when I went to prepare the fifth batch, after four days I saw that the fungus had fallen off, the first two days I poked the lid of the jar a little (with a clean dry bamboo stick). Only on the third day the lid was not opened. Now, can Kanji with fungus be eaten or should I throw it away? Please let me know. I know, I bother you a lot, ask a lot of questions. Please forgive me.

    Hi ,
    I used the Ikea jar which was air tight and I realised after two days that I had to put a cloth over. There's a black foam on top now. Should I discard it ? This is my first trial. Pls advise. Tq.
