    Today I'm going to show you how to make rocky road fudge.
    Unlike traditional rocky road bars that are often loaded with sugar and unhealthy fats, this recipe uses wholesome ingredients.
    This healthy snack is super versatile, which means you can easily substitute or add different nuts, seeds, or dried fruits to tailor the bars to your liking.

    Despite being a healthier version, these bars are decadent and indulgent!
    This recipe includes nutrient-dense components which provide essential vitamins, minerals, and healthy fats.
    The recipe is straightforward and doesn't require much time to prepare.
    These bars are suitable for various dietary preferences, such as vegan or gluten-free diets.
    ROCKY ROAD BARS RECIPE
    (makes 12 bars)
    7oz dark chocolate (200g)
    1/3 cup natural peanut butter (85g)
    1/4 cup date paste (75g)
    1/2 cup almonds (80g)
    1/2 cup walnuts (60g)
    1 cup puffed rice (30g)
    1/4 cup dried cranberries (35g)
    NUTRITIONAL INFO (per bar):
    199 calories, fat 12.7g, carb 21.1g, protein 4.7g
    Instructions:
    Soak the dates in hot water for 10 minutes, then process for 1-2 minutes until a smooth paste is formed. Alternatively, blend in a food processor if using fresh dates.
    Toast the almonds and walnuts in a skillet over medium heat for 5 minutes, or until lightly golden and aromatic.
    In a microwave-safe bowl, add the dark chocolate and melt it in 30-second increments, stirring in between, until smooth and creamy.
    Add the natural peanut butter and sweet date paste to the melted chocolate. Stir well with a spoon until fully combined.
    Fold in the toasted almonds, walnuts, puffed rice, and dried cranberries. Mix thoroughly until all ingredients are evenly coated in the sticky mixture.
    Line an 8-inch (20cm) brownie pan with parchment paper. Spoon the mixture into the pan and spread it evenly with a spoon or spatula. Press firmly to pack all the ingredients together.
    Allow the mixture to cool completely. Then, transfer the pan to the freezer for about 1 hour or until the chocolate is fully set.
    Once set, remove the pan from the freezer and place it on a cutting board. Slice the chilled mixture into 12 equal pieces using a sharp knife.
    For the best crunchy texture, store the healthy rocky road bars in the refrigerator.

    I made these today. I subbed Prunes for Dates, cashews for the other nuts, and I added some dried cherries. This recipe is amazing and I plan on making a bunch of permutations of this. You are awesome. Great vid.

    Omgosh yes!
    Ive been mixing almonds and seed mix into some oat milk chocolate and making little mounds out of them, i was just wondering if I could incorporate peanut butter. Totally making these instead.

      Thanks so much Roxanna! Actually it is a Dutch company, its headquarters is in Amsterdam, but they have their stores all over the Europe. This one is super easy, and because of the chocolate you don't really need any gelatine inside.

    Be careful with dried fruit. Most have about 20g+ per serving of added sugar like cranberries

      You can make this sweet paste out of any dried fruits you have, let's say raisins, soak them in hot water, drain and process into paste, use same amount. Alternatively you can go with maple syrup or honey, 2 tbsp would be enough I think.

      Yes, but in that case you'll need something to hold its shape, like coconut oil or cocoa butter.

      You can store this snack in your fridge for up to a week, but you can put it in your freezer for even longer time.
