I made these this morning and I must say - they are tasty. I used chopped ham and red onions. If you have cottage cheese haters in your house they will never know it’s in the recipe! They have a soft cake-like texture. I’m impressed. ❤
Wow I just finished making these I use zucchini and spinach and green onions and mushrooms with sausage and I'm blown away I've already eaten four lol. Definitely going to be one of my favorite things Thank you😊
I finally made this for dinner tonight, in a different version, that was on my mind for a long time. I used ground beef cooked in lard with onion, garlic and whole fennel seeds. For batter, I used 1/3 lupin flour and 2/3 pumpkin seeds flour, which has an amazing protein content and which I just started to experiment with recently. I had to triple the amount of milk to reach the right consistency of the batter, probably because of the flours used. I also added some toasted pumpkin seeds to the mixture for fun 🙂. I did not make muffins, just poured the mixture into a greased baking dish, topped it with shredded cheese and baked it as a pie for about 35-40 mins. It turned out great! One of the best dinners I've made in a long time. The fennel seeds are just amazing in this dish. My wife enjoyed it a lot, too. We will be making this again soon, for sure. I've been making these all summer in various flavours. Best "find" ever! I am also a fan of frozen veggies - such an easy way to increase veggie intake!
I made it exactly according to the instructions in the recipe but instead of muffins tins, I flattened it in a pan as a pie. I sprinkled hemp seeds on top for decoration and a boost of protein. It turned out delicious!

Thank you! One pan is fine. I like to use two so the tops don’t bake into each other. If that happens just use a knife to cut them before removing them from the pan. To be honest, I haven’t used liners so I’m not sure if they would work well. If you do try it, please let me know. I hope you enjoy them! 😊

Wow! These look delicious! Do you think I could use 1 1/2 cups of crushed pork rinds in place of the flour? Perhaps by using and additional egg and some unflavored gelatin? I am not an experienced baker.
Thank you! I would not recommend the gelatin. This is quite flexible with the type of flour, you can even combine flours. I have not experimented with crushed pork rinds, if you do try it, let me know how they turn out. 😊
Wow looks good. That amount of ingredients seems like it would make more than just 12 muffins though. Will have to try it to convince myself. I plan to freeze most of them for consumptionon a later date.
I would suggest adding some veggies with high vitamin c, such as dark leafy greens or bell peppers. This will help your body absorb the iron from the lentils a lot better. A tip I learned from a dietician! 😉
@sandracarter7231 you can definitely use what you have! I often like to give my muffins a little room to rise. If after baking, your muffin tops have baked into each other just cut them with a knife before removing them from the baking pan. I hope this helps! Enjoy them 😊

You can definitely make them smaller muffins! You will need your watch the bake time. I freeze mine also 😊
