A fun tip as far as making Asparagus Soup: If you add a small handful of spinach leaves to the simmering broth a few minutes before you blend, the chlorophyll inside the spinach will greatly enhance the green color of the soup without leaving any hint of a Spinach taste. Anyone looking to try this recipe should try it.

You have a baseline now in terms of how much spinach to add and can adjust accordingly Also, when you want to go full-scale GOD mode on this recipe, let me know. You will have people asking you why you don't own your own restaurant at this point. And yet, it is such a simple addition. Seriously, just ask.
We made this a few weeks ago. It's absolutely incredible. As an asparagus lover, it was a little tough to blend 2 lbs of asparagus up, but after we had the soup, I'd do it again in a heartbeat! In fact, we just bought another 4 lbs of asparagus today. 2 lbs to eat as we normally do, and 2 more lbs for this soup. Thank you for all the work you put into your videos and the phenomenal recipes, we've tried dozens of them, and every single one has been awesome!
I made this last night and paired with a fresh salad topped with bacon. I also got a baguette from the french bakery down the street. This recipe is amazing, fun to make, and my family loved it! Thank you so much Chef John!
6 years later, and I’m coming here on Christmas Eve to jazz up my asparagus soup for first course- we’re in Aus so fresh veges for holidays are lovely, particularly in the heat. Addition of Parmesan is terrific! Many thanks. ❤🇦🇺
I’ve made and eaten many wonderful bowls of cream of asparagus soup. This is by far my favorite recipe. The reason-cayenne pepper. That one simple extra spice turns this soup into a masterpiece of flavor. Nothing to do with heat...the cayenne pepper somehow brings up the flavor of the asparagus, and gives a tantalizing depth to the delicious richness of the soup.

I used to work at a hotel, and they once served Cream of Asparagus Soup in the cafeteria. Wow it was runny. Not just that it was runny, I think they use too less asparagus (to cut cost maybe, or they used too little of white asparagus) and also it only tasted like savoury milk. Like seriously. I really should suggest this video to them. Thanks a bunch, Chef John! :D
Served this at a summer picnic chilled and it was fantastic. It was a very hot day and the last thing we wanted was hot soup. But it was one of the highlights of the day and that's with pork belly and gelato. Thanks Chef John your the best.

I had trouble straining the asparagus. I like to not use the tough ends. Then once the asparagus is tender, I take half out and blend the other half. Then add back to the pot. I love your velvet voice and we have made many of your recipes.
excellent video. if you were to use a vegetable broth instead of a chicken broth, would you then just use the broth from the water you cooked the asparagus in? Luv the idea of adding parmesan and lemon zest to whipping cream.

I just cooked this soup two days ago and it was successful! It was very very delicious and less hassle than I thought. I did not put heavy cream for my calorie instead I still made lemon parmesan cream for extra fancy like John said. I love extra fancy
Just made this while the GF was making some cheesy english muffin crab melts she found on pintrest. Turned out awesome! They really complimented one another and it was totally unintentional. So do you (Chef John or anyone who has made this) have any suggestions on what to use to fortify or add some substance to this. Some chunks of something in this would be great. The only thing i can think of is maybe mushrooms or just chunks of half stale french bread.
I add a couple potatoes and carrots to the mix. Cut up like the onions and brown with butter before adding the broth, makes the soup thicker. You can save the potatoes until after blending then add them for chunks..
Looove your style! Unfortunately my tummy has a hard time tolerating lactose so I'm thinking of replacing cream with natural yogurt (it doesn't give me a tummy ache for some reason), would that work?
