The BEST vegan fried "chicken" sandwich!

  • Recipe for Chicken Fried Mushrooms
    1 lb oyster mushrooms
    1 1/2 cup flour
    1 tbsp Italian seasoning
    1 tsp cayenne
    1 tbsp garlic powder
    1 tbsp onion powder
    1 tsp white pepper
    1 tsp salt
    1/4 cup beer
    1/4 cup JUSTEgg
    Oil for frying
    1. Mix together flour, Italian seasoning, cayenne, garlic powder, onion powder, white pepper, and salt.
    2. Take 1/3 of the mixture and place in a separate bowl. Add beer and JUSTEgg to create batter. It should be the consistency of a salad dressing.
    3. Tear the oyster mushrooms into pieces about the size of a chicken thigh. Bring oil to about 350°F (check out the "is the oil ready?" test in the video). Dredge the mushrooms in the flour mixture, then coat in the batter, and then again in the flour mixture before dropping in the oil.
    4. Cook for about 3 to 4 minutes on each side, until golden brown. Set aside on a wire rack to drain excess oil.
    5. To assemble sandwich, make a sauce by mixing together 1 part vegan mayo, 1 part ketchup, and 1/2 part relish. Add sauce to bottom bun, add mushroom, add more sauce, top with lettuce, tomato, and bread pickles.
    For Hand Cut Fries, wash the potatoes and cut them into thick "fries." Soak them in cold water for at least 1 hour and up to 4 hours. Rinse off any excess starch and pat dry with towel (make sure they are as dry as you can get them). Fry them in oil at 350° F, making sure not to crowd the pot. They will take about 6 to 7 minutes to turn brown. Remove from oil and let them cool on a wire rack. Just before serving, fry them all at once again for around 3 minutes, until they turn a deep burnished brown. Season with salt or your favorite seasoning blend while still hot, just before serving with your sandwich.

    Can I just say, an old restaurant trick for anyone who can't drink beer is to substitute it out with Sprite or 7Up or any lemon/lime soda. It stays just as crispy and bubbly without the use of beer (mostly used for anyone who is trying to stay sober and doesn't want to buy a 6 pack of beer)

    It literally looked like Lulu was smiling and saying "Hi!" What an adorable little dog. And the oyster mushroom does look like chicken. It looked delicious as well.

      I know! Lulu is the sweetest dog in the whole wide world! We got so lucky with her! And you're right--the oyster mushrooms do a MUCH better job than i expected in mimicking the texture of chicken!

      Our love story is an unlikely one, I'll give you that! But I love to believe that God was saving Anthony for when I was ready for him. It took a very long time to get there, but when I finally did, I think everyone was happy that I arrived!!

    I put a little no chicken bouillon in the wet batter. Gives it the chicken flavor and it smells like your frying chicken

    honestly something I really appreciate about your channel is the fact that your "koreanness" really pairs well with the sort of hip aesthetic you go for. You have a channel that really mimics the average American hipster channel but with the korean songs in the background and you occasionally using chopsticks while cooking and it gives your vides a boost of uniqueness and individuality which I think is really soothing and pleasant to watch.

It is nothing but evident that the magic you describe in her kitchen belongs to you; it's something that you have the ability to create around you, in fact, interim clutter can be beautiful, it can be warm.     Wow looks so delicious. I'm literally watching this just after midnight and am resisting the urge to go into the kitchen, lol! I also am a clean as you go person in the kitchen. Small kitchen with little counter space so it's necessary for me. Your dog baby is so cute!

      Yes the cleaning as I go thing is newer to me. I used to be of the “make a huge mess for the end” variety but my mom and aunts always made fun of me for that. Now I try to be more like them!! And lulu is the best!

      Also the bestest fried chicken is Korean and it's double fried just like the best fries are double fried. Cook out the moisture then cook it again for the CRUNCH!

    Halfway through the video and it already looks soooo yumm. I am craving this thing now!!
    Pro tip joanne: use beer or carbonated soda for makinh crispy fish and chips. Use constarch for making "fried chicken." It makes mushrooms meaty like and sooo freaking crispyyy.
    Also can you try making yukaejang recipe but vegan Without the meat please.Would really love that.❤ love the content. Waiting for new podcast episode

      Great tips Eddie! And I have a vegan yukgaejang recipe in my cookbook! :) It is one of my all time favorite recipes, but very few ppl are familiar with it so not a lot of them make it. You should give it a try!!

    I just read “Laetiporus sulphureus, a mushroom, and is more commonly known as 'Chicken of the Woods. ' It can be found across Europe and North America, mainly on oak trees, but can also be found on yew, cherry, and sweet chestnut trees. Taste like chicken”

      I got to try this once at a restaurant and MAN it was UNREAL how much it tasted like chicken breast!!! CRAZY!! I have since searched high and low where I live for it, but cannot find it ANYWHERE. I would have to grow it myself lol. that is too much effort!!

      From what I've heard mushrooms are fairly easy to grow, as long as you are capable of remembering to water things (I'm not 😅)

    For me it's a massive plate of homemade buffalo hot wings. The vegan seitan or cauliflower alternatives just don't cut it. Although, vegan buffalo hot sauce is to die for!

    How do you think marinading the oysters would work? I'd imagine a bit of Maggi(european vegan umami liquid) would really up the "chicken" flavor of the oysters.

      Of course! there isn't really one single reason, but a lot of reasons. Most directly, it was b/c my then boyfriend (now husband) wanted to go vegan and I felt a little pressured to join him (he's a little judge-y lol). But it was also b/c I thought it could help me lose weight and b/c I thought it was better for the climate. Ultimately, I tried it out as an experiment and decided to stay vegan when my father got cancer (I felt like God was trying to show me how I needed to be a good influence on him).
