- Featuring a flavor combination that is literally tongue-stunning, let me tell you all about my favorite meal during our entire trip to Malaysia!
Eating three types of amazing fish tonight with two of the most crazy condiments known to man, I am having a blast here in KL with my wife Li - I'd like to thank YOU for joining us today.
Wow do people here go crazy for this meal (I'm honoured to now count myself among them!). For the both the clean flavors AND the funky, for all the fish (spicy, sour, and deep-fried deliciousness!) this meal really is worth traveling to Malaysia just to eat. Northern Malaysian cuisine* presents a truly mind-blowing amount of flavor and fun on one table, not least is the combination of fermented shrimp with spicy chilies, and 3-4 week salt-fermented durian.
**This dish is popular in the Eastern and North-Eastern coastal areas, the states of Kuala Terrangannu and Kelantan.
Ikan Singgang is a dish that I remember from previous trips, and is also a dish that I would choose as a proud and health-ful example of how (more than any other place in the world!) the cuisines you'll find in South East Asia simply excel in the aspects of both health AND in flavor (whereas in most places I have lived/visited, you sort of have to EITHER to prioritize health or to prioritize flavor...).
I will dream of this meal until the next time I can have it, and thanks again to our friend Shariff Hudeen for taking such good care of us. Cheers man! Hope to see you again.

This restaurant belong to Kelantanese (people from state of Kelantan)..Most of bordered people here can speak Thai..I also can speak but quite little bit but my father is super fluent in Thai.

Usually i will mix budu with tempoyak so seeing you mix both made my day hahaha btw..the northern most state of peninsula malaysia is perlis....kelantan is the north-eastern most state of peninsula malaysia :) love your take on our food. Enjoy malaysia!

I would've lengua (tongue taco) and a fried fish taco with durian and tempoyaki or tem poo yucky on the side of the table in hopes Joel shows up.

Singgang is one of the easiest dish to prep. With Budu and Tempoyak, I could have 2-3 plates of ricw with it. A commoner's food.
