- I recall having a version of this dish in Greece, and I am sure the Greeks brought it to Sicily, and I am sure the Sicilians brought it to America. I have found it at weddings and on the menus of Italian restaurants across America. It is a great dish for a large party and for a buffet table. This is the only video that does the eggplant freshly straight to oven , the rest was all either fry them and stuff and baked or bake the eggplant first and stuff meat and bake again , thanks 👌🏾this is what I exactly what wanted ❤️

I usually cut the eggplant into very thin slices, stir-fry them in some olive oil, then stir-fry some meat balls. After that i stuff the slices of eggplants with meat balls, roll them, put them in an oven tray, cover them with tomato sauce and grated cheese, bake them, and finally serve my dish with tahini topped with parsley.

Looks delicious! Unfortunately eggplant is difficult to find in my rural neck of the woods. Local grocery stores rarely carry it.

One vegan cook uses a grapefruit spoon to hollow out vegetables and to de-seed cucumbers. Rather than using a low-sided jelly roll pan and trying to tent the foil, a pan with higher sides for baking or roasting would work better.
Grapefruit spoons are so handy...use mine to hull strawberries.
I soak mine in salt water and it's not bitter anymore
I put my eggplant in the fridge for a few days and it went all brown ???? So what did i do wrong

While I do enjoy these recipes and have subscribed I don't appreciate that she doesn't bother to comment on her followers comments or questions. It makes me wonder if she bothers to read them.
I know from my own Facebook page that it’s difficult to answer each and every person and it’s you would need an hour show plus to make comments on some of the comments people leave. So I think your request is unreasonable. Matter fact it does annoy me when she says so and so from the city suggested this or that or that I don’t wanna hear it. I just don’t wanna hear it.
