Hi Maria, You can use almost any size or shape platter you like ( or have, as long as they are flat. The platter in the picture is a silver plated platter, probably 20 inches long and 12 inches wide. This will feed 45 to 60 people comfortably. If you watch my other fruit videos, I use plastic, stainless steel, silver-plated, and even framed mirrors. The mirrors have a back on them because the weight of the fruit would break the mirror. The beautiful part of using different size platters is that each one comes out differently. Hi, The very best way to keep fruit fresh overnight is to take a double layer of paper towels, moisten with cold water, and place over fruit. Wrap well with plastic wrap. Store in refrigerator. Very important - you shouldn't do any berries the day before. They always need to be done at the last minute. Both raspberries and strawberries get soft after you wash them, and the colors of berries bleed into the other fruit if left overnight. Lastly, papaya, kiwi, and oranges should be wrapped separately in plastic wrap and added with the berries. I wish you the best of luck. Please send me a picture of your platter. There are no words for how rewarding it was to see a professional chef have to bop the knife into watermelon like I do. My mother gives me so much flack for that. Haha
With the pineapple if you stand it up and pick a leaf dead center and pull it very gently. If it comes out with no resistance it's ripe. With the watermelon rind it can be pickled and canned

When I cut watermelon, I take my cutting board and put it inside a cookie sheet. That is an easy way to contain the juice. Just empty into the sink.
