Since you covered up the mirror, who's going to see it, so any ornate frame will do with saran wrap. Take a picture before they start digging, it will look messy then. The watermelon look like salmon fish with scales. Good Job.

Really, you can do this on any type of platter. Ceramic, silver, whatever you have. I'm a professional caterer and use mirrors for lots of different types of displays. But use whatever you like. It's more about the fruit and less about the platter.

Beautiful presentation chef! Could I prep some of the fruit and then transport to the venue or shall it all be done onsite? Also, what does the mirror need to be cleaned with before use? And lastly, can a this be done as a newbie?

    • @CookingwithChefRich
      @CookingwithChefRich  Рік тому

      Hi Purplerain,
I am glad that you like my video🙏
      The 1st two questions are....
      1. How many people are you doing this for?
      2. Why are you using a mirror?
If you use a regular mirror, the weight of the fruit will break the mirror.
You need to put a back on the mirror first. I used 1/4 ply wood.
Cut to the right size, sanded, glued to the back of the mirror, and paint the edges. I painted mine black. This actually gets done before you glue it to the mirror.
Next, if it has a frame, like the one I used, the edges need to be caulked. You can use kitchen caulking for this. I clean my mirror with a little clear vinegar.
      I own 5 mirrors, because I was a caterer.
I would never do this for just one use.
Use a platter. Silver, metal or ceramic.
      It's a lot easier.
The above mirror feeds about 150 people.
I have another fruit video ( it has over 200,000 views,so you know which one to look for).
That platter feeds about 35 to 40.
You can do it at home, and wrap it very well.
If you are not sure how to wrap it, please ask me.
Very important, Strawberries and raspberries will get very soft if you wash them more than an hour or two before use. They will also bleed into the other fruit.
I would spend the 10 minutes, and watch the above video. It is definitely more detailed.
If you do make a platter, please consider sharing it with me.
      CookingwithChefRich@gmail.com
I wish you the best of luck.
      Be well,
      Chef Rich

    • @CookingwithChefRich
      @CookingwithChefRich  Рік тому

Also, can it be done as a newbie?
      Absolutely, yes!
You should watch the other video 1st. Then, as you are making your platter, play the video. I do step one, and then you do step one. And just follow along. You will be amazed.
If you do have time for a test run, that works better.
In the next video I post, sometime this week, it will have 2 of my viewers' platters that they made and sent in.
      They are so impressive.
      Good luck!

    • @CookingwithChefRich
      @CookingwithChefRich  3 роки тому +1

Fruit generally goes by the person...between $2 and $4 per person.
You should have different size platters.
If you platters feeds 10 people you should be charging between $25 and $40 depending on the market you are in.
      Hope that this helps.
      Chef Rich

Size of the platter or mirror (not a literal one) type of fruit ( basic to more exotic ) if their in season (it doesn't matter if technically a market has it a year around, in and out of season different pricing)
But what the chef said is the general rule ...
In my country, a mirror this magnitude, considering the fruit + quality, is on + decor +carving (if you put on) + work & taxis = total selling cost would be steep it can be up 600€ to 1000€ with the reputation of the chef ....
I do the job, that's why I'm so specific...
But if where you are, the cost is lower (because they don't come out of your country) it can be, a very big difference.... and you can play with pracing more easily
Or an easier way to see it
      Food cost + Los + time + work/ labor + transport (if needed) + HACPP , ISO(If you dive to those waters)+ power & warer+ taxis = total cost
      ÷ by head
and then how much % do you want to profit. ... and what lax you have as a businessman to play with price without losing profit until you have a footprint big enough in the market ...to upgrade your price without losing your customers.. ..
I hope it helps. ... and that I didn't bring anyone a headache with this ...
Just because you said about being a business....

      Hi KL,
Unfortunately this isn't something that is meant to be preserved. You can do it maybe 2 1/2 hours before you party. Wrap it with plastic and leave it in a cool room.
If you do a smaller platter,
(See my other frui videos), it can be covered with damp papertowel, wrapped in plastic, and refrigerated. This can be 1 day ahead of time.
If you do this, add the berries last minute because they bleed into the other fruits.

Chef, the sound changed for the better, but as a floral designer, I think the grapes are ugly, maybe they would look better with the stems off, or just replace the grapes with more strawberries or another berry. and lose the pineapple top, its unnecessary and out of scale with your beautiful fruit tray. Oh yeah, make an arrangement of the different flower fruits and replace the grapes and pineapple top. Chef, it is a work of art deserving of the mirrored frame. Thank you so much.

      Hi Hey Jude,
If you watch some of my other fruit videos, I do lots of other centerpieces that may be more to your liking. I am guessing that you will find something that you like.
Thank you so much for watching 👍🏻
I am glad that you like my artwork.

Oh chef, I'm sorry I have given you the wrong impression. I think your work is beautiful and so artistic, it's masterful. I just didn't like that pineapple top and the grapes with stems. For me it's like using the stems instead of the blooms to make an arrangement. Please accept my apology. Your fan, Jude

      Hi Hey Jude,
      No worries.
I accept that not everything I do is going to be to everyone's liking. I hope that at some point, you will do your own fruit platter. The idea of
" Community progress" means that you will take the ideas that you both like and dislike from me and build on them.
Thank you for letting me know that you do actually like my work.
As a UA-camr, I have come across people who have nothing better to do than criticize other people's work.
If you do try your own, please share a picture with me.
I would love yo see it.

      Thank you and be well,
      Chef Rich

      Hi,
A 16-inch round platter will feed 30 people very comfortably.
      If you watch,
      ua-cam.com/video/RAwSt1JS4Fo/v-deo.htmlsi=O5_41ZUtbMEQ-NzN,
      These are all 16-inch planters.
      I hope this helps.
Please let me know how your platter turns out.
      Thank you for watching 👍🏻

Chef you're a pro skinning the melons but the sound quality of your video is poor, and you talk a little fast. could you slow down a little with your commentary please. Thank you for showing how to tell a ripe melon.

      Yes, it is a mirror.
Before the pandemic, I was a caterer, and a mirror like this feeds about 150 people.
Thank you so much for watching, Bro👍🏻
