One part of my brain goes "oh wow! And it looks so easy!" And the smarter part of my brain starts laughing hysterically, knowing it's bound to be anything but, with my clumsy hands.
Since you covered up the mirror, who's going to see it, so any ornate frame will do with saran wrap. Take a picture before they start digging, it will look messy then. The watermelon look like salmon fish with scales. Good Job.

Hi Purplerain, I am glad that you like my video🙏 The 1st two questions are.... 1. How many people are you doing this for? 2. Why are you using a mirror? If you use a regular mirror, the weight of the fruit will break the mirror. You need to put a back on the mirror first. I used 1/4 ply wood. Cut to the right size, sanded, glued to the back of the mirror, and paint the edges. I painted mine black. This actually gets done before you glue it to the mirror. Next, if it has a frame, like the one I used, the edges need to be caulked. You can use kitchen caulking for this. I clean my mirror with a little clear vinegar. I own 5 mirrors, because I was a caterer. I would never do this for just one use. Use a platter. Silver, metal or ceramic. It's a lot easier. The above mirror feeds about 150 people. I have another fruit video ( it has over 200,000 views,so you know which one to look for). That platter feeds about 35 to 40. You can do it at home, and wrap it very well. If you are not sure how to wrap it, please ask me. Very important, Strawberries and raspberries will get very soft if you wash them more than an hour or two before use. They will also bleed into the other fruit. I would spend the 10 minutes, and watch the above video. It is definitely more detailed. If you do make a platter, please consider sharing it with me. Hi Daisy, It is called a Channel Knife. I use a brand called Victorinox. Other brands may not work as well. I justed checked on Amazon and it was $23.00. Fruit generally goes by the person...between $2 and $4 per person. You should have different size platters. If you platters feeds 10 people you should be charging between $25 and $40 depending on the market you are in. Hope that this helps. Chef Rich
Size of the platter or mirror (not a literal one) type of fruit ( basic to more exotic ) if their in season (it doesn't matter if technically a market has it a year around, in and out of season different pricing) But what the chef said is the general rule ... In my country, a mirror this magnitude, considering the fruit + quality, is on + decor +carving (if you put on) + work & taxis = total selling cost would be steep it can be up 600€ to 1000€ with the reputation of the chef .... I do the job, that's why I'm so specific... But if where you are, the cost is lower (because they don't come out of your country) it can be, a very big difference.... and you can play with pracing more easily Or an easier way to see it Food cost + Los + time + work/ labor + transport (if needed) + HACPP , ISO(If you dive to those waters)+ power & warer+ taxis = total cost ÷ by head and then how much % do you want to profit. ... and what lax you have as a businessman to play with price without losing profit until you have a footprint big enough in the market ...to upgrade your price without losing your customers.. .. Hi KL, Unfortunately this isn't something that is meant to be preserved. You can do it maybe 2 1/2 hours before you party. Wrap it with plastic and leave it in a cool room. Absolutely. Make the entire platter, except do not add any berries or papaya. That needs to be done last minute. Also, I will wet some paper towels, and place on top of the fruit before I wrap it. Make sure that you refrigerate it. Good luck💞

Chef, the sound changed for the better, but as a floral designer, I think the grapes are ugly, maybe they would look better with the stems off, or just replace the grapes with more strawberries or another berry. and lose the pineapple top, its unnecessary and out of scale with your beautiful fruit tray. A Full, 16" platter feeds 35 people comfortably.
