  • The bread yeast meads are BACK. For years, y'all have told me to give bread yeast a chance in homemade mead. Yeast is just yeast! Right? In this 5-way test, we saw how different bread yeasts stack up against each other: Fleischmann's rapid rise, Red Star, Red Star Platinum, Baker's Corner, and One in a Mill. Which one tastes the best after a long aging time? Which one was worst? We'll find out! Thanks to ‪@ManMadeMead‬ for joining me for the completion of this grand adventure.

    I ONLY use "bread" yeast for wines and meads. Can't complain Out Tanadco brand ferments out to 15%ABV floculates well, and has NO off flavours.

    Honestly considering using mead yeast for baking instead of ever touching bread yeast again, I'm sure mead yeast could rise a pizza dough

      Well , Let Me Ask You A Question ❓. Let's Say I Wanted To Enter A Mead For Judging 🧐 , After They've Aged Properly. My Favorite 2 Would be Muscadine , Scuppernong Blend . & Figs . What Yeast & Honey 🍯 Would Give Them The Best Chance To Showcase Their Flavors ? As They Stand Now , I Wouldn't be Scared or Ashamed To Put Them Up Against Anybody's . But , I Want To Give Them The Best Chance . What Say You On The Yeast & Honey 🍯 To Go With Them 2 Fruit ? 🐯🤠

      P.S. I Would Be Cooking Both of Those 2 Fruit , As Is Customary & Tradition , for Generations , In This Part of the Country Anyway . Before Fermentation and After . To Go In Secondary Or Conditioning . If That's Any Help To Know , Or Make An Option . ALL Suggestions Would be Appreciated ☺️.

    Great way to address the folks that think that age heals all wounds. The yeast is yeast crowd needs to see these videos. They need to experience a side by side with bread yeast vs a lutra/qa23 in a dry mead to see how the yeast really contributes.
    Bread yeast is great for bread and boiling for a nutrient in places where nutrients aren’t available.

    I know MMM likes to tell you to try things yourself, but like... Isn't it sometimes just better to stand on the shoulders of giants? I'm never going to make a test this comprehensive and impressive, and I doubt anyone else watching this is, either.

      It was as much to settle my own curiosity, as to share what I found with you all! After years of hearing people say, “just use bread yeast,” I wanted to really know how it would turn out. Thanks for tuning in!

      @@DointheMost Oh no, I'm not complaining, this is a great test! I'm just saying that I'm never going to do as thorough of a bread yeast test, and unless I think you're lying or are delusional, it's probably just better for me to explore other avenues than bread yeast in order to become the best mead maker possible.

      The purpose was not to compare bread yeast to wine yeast, it was to compare bread yeast to each other.

    I have only used bread yeast once on Joes ancient orange and hated it. It's been over a year and it is drinkable but still not a favorite. So many great yeasts out there I can't imagine using bread yeast in anything but bread after this.

    Two thoughts:
    1. Bread yeast is actually bad for beginners because of how poorly it flocculates. Beginners want clarity and are often curious about how long it takes to achieve. Bread yeast only makes this harder.
    2. The whole viking larp makes even less sense when you consider that Scandinavia hasn't been relevant to mead for centuries. It ignores the equally fascinating history of mead in eastern Europe, which is still a living tradition.

      If you are seriously committed and had nothing but bread yeast and time I suppose you could collect and reuse the flocculated bread yeast from primary artificially selecting over many generations for flocculation.

    Thanks for doing this. I know about the "yeast is yeast" attitude but have never brewed anything with bread yeast myself, and after seeing this I honestly don't see why would I, lol!

    Thanks for doing this. I'm convinced to not bother with bread yeast for mead/wine brewing unless it's the only option. Decent wine yeast is available and affordable for me. It would have been interesting if you had made a mead with the same honey and a commonly used wine yeast, such as EC-1118, to compare the bread yeast mead to.
