  • I've made yogurt at home with pasteurized milk for over 15 years. I've made it on the stove top and in an instant pot. I had my preferred system down, but when I finally got a good connection for raw, unpasteurized milk a couple years ago I had to rethink some of my yogurt making steps.
    In this video I show how I approach making homemade yogurt in the instant pot differently from raw milk. I also go over how the final product differs, and how it differs when making strained greek yogurt and labneh.

      Right! I think it was you who got me thinking about this about a year ago. I wish I had goat milk to play with. Would love to experiment with yogurt, cheese and soap, kefir and and and… :)

    I use mesophylic cultures for my yogurt. I use a nutmilk bag for straining

    Have you made kefir with raw milk?

      I have! I used to use pasteurized milk for my kefir, but now that I have a consistent source for raw milk it is all I use for everything. We love it.

    Maybe I missed it, but…
    Are you still using some previous yogurt to “inoculate” the “new” yogurt? Or have you tried just using the raw milk with only the beneficial bacteria that are already in it?
    I’ve been just making clabber and using that as my “yogurt” (sometimes I strain it, but most of the time I just leave it thin). ❤

      I’m still using yogurt to inoculate the new raw milk yogurt. I have also made clabber and clabber cheese, and even started ages rennet cheese using my own clabber (instead of store bought cultures). But yogurt works well using a previous batch or even store bought yogurt as a starter.
