You should redo the shakushuka with Adam Ragusea's or Kenji Lopez-Alt's recipe. You definitely went too crazy on the substitutions lmao these guys do it simpler
Seriously, I've been making Kenji's burgers and they are incredible. Another thing is not to mix the meat, just season the patty, it provides a better texture this way

Subbing almost literally everything is an art of trial, error and risk management. PSA cutting meat correctly makes it more tender. You want to end up with pieces of vertical grain structure that you bite down onto. Think of fibers bunched together upright vs. bunched together horizontally. One is a lot easier to bite through and separate the fibers from each other while other is very difficult to get through, since they are long strands supporting one another.
Shakushuka is basically a scrambled eggs with tomato sauce , so less is the bast , I cook mine with salt and pepper, 1 tsp of white vinegar , and on happy days I cooked with butter . If I go fancy I drizzle soy sauce, cumin powder , add chopped garlic to the tomato paste and that’s it

Put thinly sliced onions on top of the smash burgers as they're cooking on the first side, then when you flip them the onions caramelize. S tier burger.
