    Swiss person here, most people in Switzerland don't buy an entire wheel of cheese to make Raclette at home, that's for restaurants and maybe loaded tourists. We buy packs of pre-cut cheese slices, that fit perfectly in our Raclette-oven. In my family we always buy a variety of different Raclette cheese. There's plain, with chilli/paprica, with garlic, with pepper and I'm sure if you'd go to a cheese shop you would probably find all sorts of creations. But even tough I have never bought an entire cheese wheel, I'm pretty sure you're supposed to take the sticker off. The advantage of having a raclette oven is also that you can use it to "grill" other sides, since every family has their own tradition of what sides they add besides the boiled potatoes and the cheese. I have a friend who makes mini-pizzas and grills veggies in the raclette oven to have on the side, my family just has cornichons (small pickles), pickled baby corn, borettane onions, pickled onions and finely diced tomatoes. Others have, like you said, some cured meats on the side.

    The first machine is designed to toast a 90 degree wedge. You put it in curvedside down, then fold the two heaters to meet the cheese. It's not intended to cook a flat half wheel like your new one.

      I used to have a similar style machine and that is true, but the heating elements are still a bit too far apart, so you never melt the point of the wedge. And the angle just makes the cheese slide down before it gets any browning. Which i guess if you are tying to put a lot of melted cheese on something, that's good. And It's easier to find 1/6 wheel wedges than anything else in supermarkets. but the single element machines are so much better

    Swiss Chef here: Yes, remove the label, as it is not edible and you eat the skin of the raclette cheese. There is no easy way to remove the label. I normally just try to remove it as gently as possible.

      @@lilm5714 it's just a very thin piece of paper. i'm guessing that it's like that to prevent it from holding too much moisture and also maybe to save money on paper costs. we swiss do love our money, cheese, chocolate, watches and public transportation afterall ;)

    Some tips to improve the first Swiss raclette:
    1)
    You need different potstoes. You must use small spring potatoes with VERY thin skins. That's essential.
    2)
    Use a table grill to grill much smaller slices of cheese. Typically each person would have their own little pan which holds one slice of cheese and can be inserted into the grill. You'll grill 4-12 slices during a meal, one or two slices per small potatoe, refilling your plate with steaming potatoes and pickles and the next grilled slice as you go.
    3)
    SPICES! Paprika. Garlic. Of course the Raclette spice mixes in Europe are fantastic. I also recommed chopped onion, which you put on the cheese in the pan before grilling.
    4)
    Remove all the meats you used. Replace them with strips of fried bacon. Most raclette table grills have a stone top for grilling meats.
    Do that and you'll easily get to a 10/10.

    Tips on traditional scraping:
    -You only want the super liquid stuff on the very top, not the semi-solid cheese underneath.
    -The first scrape is oily because the cheese heats up longer and the fat seperates.
    -Don't heat it up so much that the top gets crunchy, take it out before it gets oily.

    In France most families buy the convenient raclette machine that has 6-8 different mini pans that you put under the raclette machine and it melts smaller portions of cheese individually. I'm glad you are bringing the glory of raclette to the world 🧀🧀🧀!

    Love!! Tip for the wire cutter, hold the wooden pieces at the end and then wrap the excess wire around all 4 fingers for each hand so that you can press down to the table with your thumbs. Thats how I was taught to use them for ceramics. Hope it helps!

    maybe something worth mentioning. As a swiss, my family usually puts some seasoning on our raclette cheese (they sell specific spices here for raclette but something like pepper and paprika also does the job) i find it more pleasant that way since raclette cheese (the swiss one unlike the french one you had before) is more creamy in taste. Oh and yea, remove the label

      ​@@beeeeeeeeeeeeeeee1usually rhe rind is safe to eat (same with most of the cheese) it's just a bit more chewy. As long as you don't have any paper, plastic or wax on the rind, you can eat it

    So glad to watch an American discover the joys of Raclette. In Germany, many people have it on New Year’s Eve (honestly I eat it hole year round) but not a whole wheel. We buy it sliced and have a thing with little pans that melts it. I usually eat it with potatoes and pepper, sometimes corn or veggie bacon.
    Also, I much prefer Swiss Raclette over French

    The best snack with raclette is when you put a slice of raclette seasoned with (smoked) paprika on a piece of bread and put it in the oven until it melts. Best hangover food, too. Also, if possible, put the cheese down a bit more so the top doesn‘t burn easily. Many people like the cheese thinner and more melted. You can put the bread with raclette in the pan if you want to or even lazier; in the microwave.

    I never thought watching someone scrape cheese could be so entertaining. The deadpan commentary with witty one-liners makes for a gran ol' time. The lower scored food also makes my own reheated soup and plain bread taste all the better, so thanks! It is kind of neat when some dishes are misses since it makes the ones that are actually good hit all the harder.

    As a swiss person who loves eating raclette I can't say that I have ever eaten it with the cheese scraped directly from a wheel of cheese. Here in Switzerland we have this special oven/grill for eating raclette and a lot of people eat raclette on new years eve (which we call Silvester)

      ​@@junkyyard2273 to hold the quarter piece of cheese so both sides brown evenly. You'd typically put the small plate of food on either side to scrap the cheese onto.

      @@junkyyard2273it wasn't made to melt a half piece if the cheese, it was made to melt 1/4 of a whole cheese(thats half of the part he melts in the video), if he used a quarter(1/4) piece then it would melt evenly

    I use raclette for my homemade burgers and I do agree that it leaves more space for other flavours to participate in the experience. Works super well with a fried chicken burger aswell

    They usually keep the label on and you remove it bit by bit after each use if I remember. Only remove parts where you're supposed to eat it

    I'm from Valais in Switzerland where raclette is originated from and we usually don't eat any meat with raclette, just little boiled potatoes (usually two per scrape, not more) or on top of a slice of bread. It's mostly the northern swiss that eat it with cured meats, but their cheese is a lot of times not as flavourful as ours. With us it would be seen as shameful to hide the flavor of the cheese with cured meats.
    When you scrape it off, you should do it with no force and the backside of the knive. The portions you scraped are thrice the size of a normal one. Also you should never cut into it like you did at 4:52. You usually scrape it on a free space of your plate, not on top of the potatoes.
    Also, if you have a thick rind like your last cheese you should clean it by scraping it off. This one looks pre-scraped though.
