Use some silicone grease on the grommets and connectors. Every thing will slip through easily. It's similar to the grease you get with tail light and headlight bulbs. Works great.

The only cuss word I know is "snow" (Formerly from NE Ohio). You're doing a great job getting it done fast. My laser and stud finder were the best buys I made.
Suggestion… angle cut a cedar board over that seam , maybe duplicate in opposite wall, it would be decorative too

Mike have you heard of a dead man it's a 2/4 just like a T it will help with the metal ceiling installation
Just glue magnets to back of lights. No holes in tin and you can easily adjust the lights

You've got a tough schedule... I really like the electric redo. Getting that electric stuff correct is so important.
You need to cut a 2x4 2 ft attach to another 2x4 on the end to use to hold up the metal. Plus starter holes in the metal.

You need to get some lipstick to mark the ends of whatever you are trying to line up. Then place your item where you want it and it will leave a lipstick mark where you need to put things. Works good for lining up door jams too

That's a great way of doing recessed lighting. I think one reason some people don't do it that way is that you lose access to the transformer box. Eventually that box will need replacing. Well, decades from now, maybe long after you stopped caring about it. Well, the owner can simply cut out the larger hole at that point.

Just a suggestion. You might want to consider some recessed shelving above your cooking area. The job is looking good!
