How to Make Strawberry Cheesecake From Scratch | Cheesecake Recipe
RECIPE:
Ingredients:
• 250 g of shortbread cookies (like Novellini or Digestive)- 8.8 oz
• 100 g of butter (1/2 cup)
• 250 g of strawberries - 8.8 oz
• 400 g of cream cheese (1 cup + 1/2 cup + 2 tbsp)
• 250 g of heavy cream (1 cup + 1 tbsp)
• 100 g of icing sugar (1/2 cup + 3 tbsp)
• 50 g of sugar (1/4 cup)
• 10 g of gelatine/ about 5 sheets (for the cream) + 2 gelatine sheets (for the garnish)
• 1 teaspoon of lemon juice
* I recommend using grams as unit of measure for more accurate results.
* You can use 8.5 inches or 9 inches springform pan

Is this recipe vegetarian? Where I am from all gelatin sheets are made from animals.

You are totally right. The gelatine packet I used doesn't specify what type of gelatine it is. As ingredients, the label shows 100% gelatine and that's it. But after some research I do think that it's probably not vegetarian. However, I think it can be easily substituted with other vegan gelatines like agar agar.
