When say "Here's a coupon for you" in the coding. Do you mean type " i have a 10% off coupon code for you" and type code? how do they know what the coupon code is or it reflected in cart?
i dont think shopify mentions but from other ecommerce platform it typically is when the session ends for that customer/cart. for example i am a customer and i added a product to cart and then for 30 minutes i didnt visit the site, then after that 30 minutes i would be considered an abanaonded cart. hope that helps.

yes you can inlcude any text in the email and provide the actual wording and coupon code you want to share

not out of the box. you will have to use a 3rd party app to have more than one reminder email.

Seems that our emails just go into junk. Is there a way we can make them see it and not end up in junk?
have you followed shopify's full dns settings including spf records (see help.shopify.com/en/manual/intro-to-shopify/initial-setup/setup-your-email)
