This is an urban myth. Harrison never did any of the major stunts. He did the close ups for what he calls physical acting, he was asked to do. Vic Armstrong filled in for weeks on the Temple of Doom while Harrison had back surgery. Armstrong was not being totally serious in that comment

Ford said that while his back was ailing it was absolute torture to be on the elephants in the outdoor India scenes. He said that while riding an elephant may seem like a gentle, fun ride it was very painful because of how awkwardly you have to straddle them.
