Although we both loved all 4 versions; even the 'plain' pan-fried flatbread with a little gremolata and then dipped it in the creamy cheese sauce (from the Italian flatbread recipe)! Everything tasted amazing and they were all easy to make! Thanks again :)

Will the texture change a lot? 2. How can I store the cheese? Usually I have at least 5 vegan cheeses in my pantry, some of them in the freezer... depending on what's my craving😉 how long in the freezer/fridge? Or is this cheese one of those you must prepare prior consumption? Thank you! And keep creating, I love your recipes!
Hi Cherry, thanks for your support, we appreciate it tremendously! 1. STARCH: both cornstarch and potato starch have a thickening function, but they produce a different kind of thickness and therefore are both necessary and complementary. Yes, you can replace potato starch with tapioca starch - the texture will change slightly - but you should still get a stringy result. I cannot recommend omitting or replacing corn starch - I have tried, and I did not succeed :-) 2. STORAGE: before storing, make sure your vegan cheese has cooled down to room temperature. Then store in a bowl, covered, in the refrigerator for up to 3 days. I do not recommend freezing this vegan cheese. FYI, the cheese will clump together when in the refrigerator. This is fine. It will still be perfectly spreadable and delicious. btw, our blog also answers all of these questions (www.theplantbasedschool.com) and more. I hope this helps, thanks again for your kind support

I never used cornstarch in plant based cheeses either. Someday I really need to dedicate my whole day to all the types of starches and see what they are capable of.
