    Baingan pakora or beguni as we call in Bengali is a very popular street food but it is widely made at all homes as a tea time snack or as a side to be had with rice and dal. I have given a twist to the pakora recipe by making it crispier using breadcrumbs and giving them a cute fan shape . Following certain tips and tricks you can make the crispiest baingan pakora that you ever had. If you are not on a vegan diet then you can happily use eggs instead of gram flour .

    I don't know why there aren't more comments or more views on this particular recipe. I love this recipe! My eggplant comes out so crispy. I don't do it as the flower separated like that. I use them as sticks and then I freeze them and use them when I want to eat french fries. I eat the eggplant fries instead. Thank you for this recipe

      You can definitely do gram flour instead of wheat flour. Actually gram flour tends to make it bit soggy inside but that’s my feeling and I maybe totally wrong.

    I've been using Panko rather than other styles of breadcrumbs. Would they work with this incredible recipe?

      I have tried these with Panko but I feel the coarse texture of Panko breadcrumbs doesn’t go that well with this recipe. What you can do is blitz the panko a little in your food processor to make the crumbs bit finer in texture and then they will work out fine.

      This recipe needs breadcrumbs. Breadcrumbs are readily available at any grocery store. You can do another thing, just mix some besan ( gramflour) with water to make a batter. Dip the eggplants in the batter and fry.

    Do you think these would turn out okay in an Air-fryer? They look amazing and since I don’t eat fried chicken, these would be a huge treat!

      I do not have an Air fryer so unfortunately do not know how that will work but I have seen on television how they do fried chicken in air fryers so you can give it a try. Let me know how it turns out to be.

    Have you fried freezing the eggplants and frying them later? do they hold?

      Haven’t tried it but eggplants don’t freeze well. They have a lot of moisture so they get soggy if you try to freeze and then fry.

      Gram flour has a nice nutty kind of taste which is delicious but you can replace it with plain flour (all purpose flour). Using only rice flour will make them hard.

    what do you do with the oil after frying? drain it out or use it for later cooking?

      O my goodness I will get a heart attack if I drain out that oil. I cannot waste anything. You can always reuse this oil. If cooking non veg items I refrigerate the used oil and use it up very quickly but for vegetarian recipes I just strain the oil ( through a tea strainer) and happily reuse it for any later cooking.

    What is curry powder

      Curry Powder is a mixture of spices. It is not a staple ingredient in Indian cooking and is not used in traditional Indian cooking. It is rather an invention of the British to make one single fragrant blend of spice powder instead of adding each spice powder separately. For Indian cooking each household has their own recipe for adding spices. Some curries may just have coriander powder others may just have cumin powder or may be both or a curry may need an addition of coriander, cumin and fennel, the options are endless. I rely on curry powders if I am cooking something very quick and it is indeed very convenient when you want to jazz up a delicious dish in less time.I always make my spice powders at home. They smell divine and much better than those store bought ones which have a very mild smell. Use it in any vegetarian , non vegetarian, vegan or lentil recipes. It is an all purpose spice powder .

      Hi Aliyah any sauce of your preference will go well with it. You can even add some mustard sauce to mayonnaise . You can even have it with sour cream if you are not on a vegan diet. I sometimes put plain unflavored yogurt to my blender jar, add cilantro, mint, black pepper and blitz to make a green sauce. Add salt after blending. It even tastes great without any sauce.
