I use them as sticks and then I freeze them and use them when I want to eat french fries. I eat the eggplant fries instead. Thank you for this recipe

You can definitely do gram flour instead of wheat flour. Actually gram flour tends to make it bit soggy inside but that’s my feeling and I maybe totally wrong.
Always children do not wish to eat brinjals due to its mild bitter taste but this recipe looks inviting to try and will sure make my children wishing to eat baingan

I have tried these with Panko but I feel the coarse texture of Panko breadcrumbs doesn’t go that well with this recipe. What you can do is blitz the panko a little in your food processor to make the crumbs bit finer in texture and then they will work out fine.
This recipe needs breadcrumbs. Breadcrumbs are readily available at any grocery store. You can do another thing, just mix some besan ( gramflour) with water to make a batter. Dip the eggplants in the batter and fry.

I do not have an Air fryer so unfortunately do not know how that will work but I have seen on television how they do fried chicken in air fryers so you can give it a try. Let me know how it turns out to be.

Gram flour has a nice nutty kind of taste which is delicious but you can replace it with plain flour (all purpose flour). Using only rice flour will make them hard.
O my goodness I will get a heart attack if I drain out that oil. I cannot waste anything. You can always reuse this oil. If cooking non veg items I refrigerate the used oil and use it up very quickly but for vegetarian recipes I just strain the oil ( through a tea strainer) and happily reuse it for any later cooking.

Have you fried freezing the eggplants and frying them later? do they hold?
Haven’t tried it but eggplants don’t freeze well. They have a lot of moisture so they get soggy if you try to freeze and then fry.
