IMPORTANT TIP: If you REALLY want to eliminate the mucilage (slime) from okra, use BABY OKRA which are only about 1" to 1-1/2" long, and DO NOT CUT THEM. Leave the calyx and beginning of the stem on as they are perfectly soft when cooked, so there is no need to cut them at all and let the mucilage leak out. By cooking them intact like this the mucilage cooks on the inside and you are left with a dry-okra dish that everyone will love.

I will try this today. Kudos on your easy-to-follow recipes. Update: I used ghee instead of vegetable oil and the smell was overpowering like beef/mutton or gaminess which my wife disliked. She asked me to change it to vegetable oil so for the future no ghee. All in all, everything turns out like what you mentioned “No Slime” and it is simply delicious for me. Will try cooking again with vegetable oil in the future. So fast and easy. Love those spice aromas on the potatoes and okras. Thanks for sharing this recipe.

It wasn't sliced, the pod was cooked whole, into a flavorless slimy almost mash. Very very disappointing. I finally found a little restaurant that served it properly (sliced, & sauteed almost until crisp) with collards and mustard greens. There is a cold okra soup recipe that is quite "slimy" but also incredibly delicious. It's an acquired taste, as they say, but anyone with culinary curiosity would love it. Must dress with hot sauce.

I boil the whole okra for 2 minutes in plain water. After boiling the whole okra for 2 minutes, let the okra cool completely. Then cook as usual. There will be very little no slime. Of course, add salt at the end.
oh no! boil equal to slime always. another simple way is to stir fry and add a little corn or chick pea flour and fry till flour is crispy dry.@@gloriaf6971

We always have curry. I had to buy the other ingredients (spices mainly) through Amazon. I am in the United States. I grew up eating Okra with fish and Chicken. I have learned to move toward more meatless meals for healthier diet.

Yum. My two okra plants are taking their own sweet time to produce okras because of the unusually wet summer this year. I’ve harvested only two so far, but hopefully will get more soon, and then can try this recipe.

Thanks for giving me the idea to use potatoes with ladies finger! I'll certainly try this soon. I might complicate the process a bit. As I always do, I will wash, dry and chop the ladies finger, and fry it first. I will also boil my potatoes and then fry it separately with your ingredients. Finally, I will mix the two and then add the masalas and the rest of the ingredients. Thanks and regards.

Funny how my people will actually go miles to preserve the slime such as not cooking it too much and adding bicarbonate of soda.

Wiping the okra dry after washing it also helps reduce the stickiness. This recipe sounds great btw, definitely trying it!

You don’t need to boil the potatoes. Just cut them small and they will get well fried.
