This easy one-pot recipe features a whole chicken boiled to perfection in a flavorful broth with fresh vegetables and aromatic seasonings, all served over your favorite rice.     Ingredients:
    1 whole chicken (seasoned with thyme, onion powder, paprika, chopped garlic clove, and fresh parsley)
    Carrots (Orange, White, and Purple)
    Red Onion
    Fresh Mushrooms
    Tomato Paste
    Fire-Roasted Canned Tomatoes
    1-2 tablespoons of Red Cooking Wine
    32 oz Chicken Broth
    Rice of your choice (for serving)
    Instructions:
    Begin by seasoning the whole chicken generously with thyme, onion powder, paprika, chopped garlic, and fresh parsley. Make sure the seasoning covers the entire chicken, including under the skin.
    In a large pot or Dutch oven, bring 32 oz of chicken broth to a boil over medium-high heat.
    Carefully place the seasoned whole chicken into the boiling broth. Add the minced garlic to the pot, ensuring it’s evenly distributed around the chicken.
    Lower the heat to a gentle simmer, allowing the chicken to cook slowly, absorbing all the rich flavors from the broth.
    Add sliced carrots (orange, white, and purple), red onion, and fresh mushrooms to the pot. Stir gently to combine with the broth, making sure the vegetables are well submerged.
    Mix in the tomato paste and fire-roasted canned tomatoes, followed by 1-2 tablespoons of red cooking wine. Stir gently to blend the flavors without disturbing the chicken too much.
    Cover the pot and let the chicken simmer in the broth for 45-60 minutes, or until the chicken is fully cooked and tender, with the internal temperature reaching 165°F (75°C).
    While the chicken is cooking, prepare your rice according to the package instructions. Any type of rice will work, but consider using a variety that complements the flavors of the stew.
    Once the chicken is cooked, carefully remove it from the pot and let it rest for a few minutes before carving. Serve the chicken over a generous bed of rice, ladling the flavorful vegetable and tomato broth over the top. Garnish with fresh parsley.
