  • Tarhana soup is the perfect Turkish comfort food for those chilly and windy winter days. Despite it looks like Tarhana soup is easy to make, the main ingredient of the soup Tarhana’s making is a tedious job and it starts in the summertime.
    In Turkish villages, women get together to make Tarhana collaboratively and store Tarhana in a cool spot to use it in the winter.
    Turkish Tarhana is made with wheat. First, wheat is thoroughly rinsed and drained, then boiled for up to two hours and then cooled off in large basins. Wheat is mixed with salt and Turkish yoghurt and kneaded until it gets a mushy texture.
    Turkish Tarhana mixture is spread onto plastic sheets on rooftops for maximum sun exposure for the following 3-4 days. After it is fully dried, tarhana is collected and crumbled into smaller pieces. Tarhana is put into large cotton bags and stored for later use for up to a year.
    Turkish Tarhana soup is a popular fermented beverage that is full of protein, probiotics, vitamins, and minerals. That’s why Tarhana soup is not only delicious but also very nutritious and filling. It tastes slightly sour due to the lactic acid it contains.
