Very informative video. I bought a big pomfret here in Australia but I forgot to tell him to cut into cutlets. I was struggling to find a video that taught me easily how to do it but I found nothing until I came across yours. I am going to make Fish Moilee after I cut up my pomfret. Wish me luck !

Bengalis love that head part most and it contains a part including head and then just tail part with rest so hardly 2 pieces from big pomfret or no need to half this from comparatively small pomfret and we have numerous dishes containing fish head those are just superb ...

How to cut for stuff
Sir , I think This is wrongly method, because more fish parts is westage ,why throwing inside parts ,that is not westage sir it's a very testy item.
Basically the fish must be washed 3 to 4 times wit lots of water.

This way too much blood will make the fish meat smelly. You have to carefully remove the bloody bitter sac of gal bladder carefully and don't pop it . Any blood must be quickly washed under running water not just wash in a bowl of water else the fish blood will make the entire meat fishy smell and bitter.
