To be fair sans could have changed a lot in his fights to beat the player. As can be seen from his first attack being different depending on if you have dodged it before. He is just “losing” because he is lazy, and also there is no point in winning. He just want to teach you a lesson
He's a tiny bit more focused on trying to warn you about the literal destruction of the world, but for some reason, WE are too blind to remember that Undertale likes to pull the metagame into the game... So of course we never see it coming when Chara corrupts the SAVE file.
Also in the ending of a certain run he says he couldve ended you the second you walked in but he believed you could change so he didnt use his full power
