You still need to cut the fine roots away from the bag during repotting. The root bag produces more fine roots as it let more air into the pots... at least thats the intent of the design.

Someone suggested to me to 'start' my bonsai plants in the field in ground to get better trunk growth, but rather than letting the roots grow down deep to rest them on a plate and then backfill over the roots and plate (the idea being the roots will spread out instead of down in a more fine root/mat growth). What is your thought on this?
Thank you for watching, it’s going to be a balance between trunk growth and fine root growth. You will have to play a fine line between those two. As you get accelerated trunk growth at the same time you get mass root growth. The larger those roots grow you will have a tougher time getting finer branch and into an proportional pot size.
Ed uses commercially available fertilizer it was either APEX or GrowPower. its basically a 15-15-15 slow release fert with micro nutrs. 4-6month type synthetic. I'll ask him directly the next time we go visit him in couple of months.
