I've made some meat chips with packaged thin slice lunch meats. The brand I usually buy to make the chips is Land-O-Frost. It's sliced in circles and when it's dried it's the perfect sized "chip". 😋

Happy that you received the Hand crank grater Anita. I gave one to my Uncle recently and he loves it. He likes grating Gruyère and Kohlrabi with it. Easy to clean too! I got tired of seeing that he was grating his fingers with the old box grater (he has diabetic neuropathy and is able to use this one more easily and safely) I also have red accents in my kitchen. chicken crackling is a favourite for me, just flatten chicken skins from anything you had to remove the skin from on a oven tray, flesh side down, possibly salted before cooking. cook for about 10 mins in a hot oven, stop when they are golden, transfer to something to let them cool, and try not to eat it all in one sitting

I put mine in air frier.
I just made some last night for the first time, and everyone loved them. I did them in my air fryer, but had to do them in a few batches. I think I'll use the oven next time to do them all at once, so thanks for the idea.

Also a minimum of 30% reduced weight is ideal what you're looking for in a salted/dried meat. I weighed my tray's full with raw meat then multiply by .30 to get my target weight when dried. That's a minimum, for crunchy things it will be up to a 50% reduction in weight. Hope that helps! ❤️
I treated myself to the brand new Cosorii 10 tray. They have coupons and sales on them very often. I absolutely love it. This is the fourth dehydrator I've owned over the past 40-plus years and it will be my last. All the trays are stainless steel so no additional cost. If you decide to upgrade, be sure to look at the Cosori.

I have the butcher slice eye of round into 1/8th inch pieces and I sprinkle with Redmond salt only and dehydrate at 165 degree for six hours. They turn out perfect and delicious!! I also keep mine in the fridge but they don’t last long around here!!

Hi Anita, i have been making beef jerky for years. I have the same meat slicer you have. Some butchers charge to slice your meat and i made jerky a lot for gifts, now i want to do the crisps. The carnivoire crisps are just insanely expensive for us in Canada so this is the way to go. As alway s thank you for sharing. ❤

@@gladysobrien1055 I slice 1/8” if i want it faster, other times 1/4” thick. I marinate my meat in lite soy sauce, a little liquid smoke and a little onion and garlic seasoning. There are lots of marinade recipies online. I watch everything from Steve, everything 😆 I have not tried his chips yet but eventually i hope too.🌹

In the U.S. Kroger has prepackaged Shaved Steak. It's very lean, but works well. It was $7.99/lb. Not exactly cheap but very quick to prep as it is not frozen.

I picked up some paper-thin sliced deli roast beef, and some raw beef, chicken, and pork today. The man in the meat dept sliced it for me but it varies from about 1/4" to 1/8" so it won't all dry equally. I had to dig the old Excalibur out of storage and clean it up, but the meat is now dehydrating. Keeping my fingers crossed that it turns out good. I plan to make part of it chips and part of it into meat flour.

We recently purchased a 'new to us' London Sunshine (10 stainless steel trays & 10 fine mesh trays) which is stainless steel inside and out. Depending how often we use it, I bet the difference in hydro costs between using a 220v oven versus a 110v plug in dehydrator would soon surpass what we paid for the machine.

I have the same (larger) dehydrator. A few years ago I bought silicone and parchment sheets that are made for this hydrator. Silicone is useful if you have any substance that can drip, or that sticks to mesh. I will search out the SS mesh you found because shaved meat will dehydrate much faster on them, and it will be a great money saver, as you mentioned. I have only dehydrated plant items so far, so thank you for the new ideas!

I have loved my Excalibur 8 drawer muchly. Whatbisvtheveildest most creative things you have fone with your dehydrator. I once MADE WWWWAY to much chili, dtovkedbup all my b eighbors withbit and still had lots...so I zipped it up with stick blender and had the most amazing crackers!

I have used the Costco thin sliced ribeye and it took almost 5 hours on the dehydrate setting on my air fryer. Hubby loved it so much he ate most of it without mentioning it to me! I was wondering where it all went to. Also I have made chicken skin in the air fryer 325 degrees fore 18 minutes and you get your own carnivore crisps chicken skin. So good.

I have the same grater and I love it. I use it for the different cheeses I occasionally get like Gouda. I have the 9 tray Excalibur and have used silicone sheets for years. If you're open to them, you can get both the solid sheets as well as the screen type made out of silicone. To me, they're so much easier to clean, but I know everyone has their own preference. I haven't tried the stainless steel ones. I look forward to hearing how you like the cleaning of them because the cleaning is my least favorite part of carnivore and often dictates how I will cook.
Congratulations on the slicer, too! That's going to come in so handy! I love dehydrated meats. (I love dehydrated fruits, too, but alas... lol) I made yogurt in the dehydrator many years ago, but yogurt's never been my cup of tea. One of the positives of the 9 tray is being able to remove trays for more space, but still have trays. I wish you much fun experimenting! 🦋
This unit did come with 4 silicone sheets but I assumed they were for special applications, never thought to do the meat on them! I will try it out!
@@KetogenicWoman The meat can be done on them, but will take longer. If it's fatty meat, you'd have to dab off the fat as it pooled. I've only used lean cuts like top round because I was always always told that fat would cause it to go rancid long-term. Of course, I tend to eat everything before that could happen, so I will probably do a fattier cut in the crisps type slices just to see what happens.
I'd recommend using the silicone liners like the ones from Gucugi on Amazon. They're very flimsy so are easily washed in the sink, but they fit perfectly on the trays and the tray itself has enough support that the flimsiness isn't a problem. I don't put any meat on the bottom tray and use one or two of the solid silicone sheets on the bottom tray to catch any of the juices or fat that melts. One should be fine. I just double it to be extra cautious. I'll place a few of the weighted baking beans that are used for pie crusts on the sheet in a few places just to keep the air from potentially causing it to flap around when the pan is on. I'll rotate the racks every couple of hours, both turning them and shifting their position, and I'll wipe the catcher sheet off if necessary. Not sure rotation would be needed in the smaller dehydrator. I do find it makes the drying more even in the 9 tray one.
I like the silicone mesh ones because all the little holes allow for better airflow, and they're so much easier for me to clean than the hard plastic mesh mine came with. The solid ones can be used with ground beef, or eggs, or cheese, or crackers, or meaty gelatin collagen smears. Anything you can turn into a fruit roll-up like consistency that will still dehydrate down, or the solid slices, too. I just find the mesh is the better option when drying anything not of a liquid consistency starting out, but I'm sure everyone has their preference.
If upgrading, I've read many like the Cosari version and another large one that I don't remember the name of. I also saw a massive one once that'd dehydrate a hundred pounds of food at once, but that'd be like putting in another stove or fridge and was quite expensive. For the 9 tray Excalibur, there's a glass door that can be purchased separately which is unnecessary, but nice.
Also, if dehydrating enough that you're taking it to that crispy level, you can always chunk them in a strong blender like the grain option of the Vitamix, or I'm guessing a good food processor would work, and grind them to dust to either use for making pemmican or for creating your own bouillon. Makes for nice hot drinks or extra meatiness if making something like a soup, dip, or the various enchilada, pie, or hot pocket type recipes out there. Can blend different animals for unique flavor blends. If using spices and peppers, that opens up so many possibilities. You're so creative in your recipes that I can only imagine what you might come up with and I look forward to seeing!

Teddy deserves waaaay more chips!!
Walmart in the states have these thin multi colored plastic cutting mats that you can buy and trim to fit the dehydrator trays. You might take the rest of your thins slices of meat and arrange on the trimmed up colored cutting board and put them in the freezer or fridge until your first batch is finished. Then all you would have to do is slide in a new batch onto your trays. I dried a number of things right on the plastic. Things that were so thin and difficult to remove just popped off.

Hi Anita: Thanks for showing us how to dehydrate thin-sliced meats for carnivore crisps snacks. They would be good to keep in case the SHTF and you need some meats saved for up the diet. Meat is getting so expensive these days. I'm sticking to ground 80/20 beef and any I can find on sale.
I actually had such a situation! I took some with me when I caught a ferry to go see my kids and there was delay after delay. So luckily I had them because that was my dinner!
For lower cost jerky (see jerkyholic's web site) - not these crisps - it seems you can use 90 to 96 % lean ground beef. Anita's efforts are greatly cost saving in comparison to carnivore crisps which are $10.00 USD per 1.5 oz bag but the good meats are not cheap. Hope this helps any budget-minded preparations and backup plans in your pantry.

I sometimes buy thin sliced, unseasoned bulgogi chuck beef from the korean grocery. Also, when we butcher beef, i make the topside (dont know what you call it, super lean and dry 🤢) into jerky. I grind it, season it and extrude it as 'straps' with a little hand gadget, then dehydrate. I store these in the freezer
Rain Country, vacuum seals mason jars, they have a 7 year old jar of cooked Elk in perfect condition, as well as other prepared meats. They have been prepers for years, I will be stacking cooked burger patties for my family.
@karenreaves3650 that generally requires a pressure canner which is an investment and takes up shelf space. Once upon a time I did hanker for one but I got over it 😉

trick to slicing beef thin is put the meat in the freezer (cant remember how long see yt vids) and then pull out and slice. You are not fully freezing this meat just partically froozen.
For those that cant afford a dehydrated you can use your oven on a very low heat.

Yum! As you already mentioned in another comment these are excellent to have when traveling. I wonder what the shelf life would be on these? I think I need to do some investigation as DIY would be a lot cheaper than buying the bags. Teddi was the perfect gentledog waiting on his meat treat. Mine give me the sad eye when I am eating steak like I haven't fed them in years, lol.

Yes absolutely keep them in the fridge if you made enough for a few days worth. When I travel I bring along a small cooler bag and they are in there so I'm comfortable with that for a couple days. The Carnivore Snax people told me their bagged meat chips had a shelf life of 3 days unrefrigerated once you open the bag so I kind of go by that.
I'm really enjoying your videos & information. You're doing a great job!! Just a little idea to share with you that I recently saw as a very quick & simple way to grate butter with a hand strainer. You just run it across the butter & it grates while holding it inside of the strainer. So cool!

I just got your Ninja Foodi grill for my birthday last week and I note that it can also be used as a dehydrator. Yes I have dehydrated in that Ninja and it works great! I don't have the trays and here in Canada to buy those trays was more than the cost of my dehydrator which I got on a great sale! But thanks for the reminder, I could get them both going! The ninja without the added trays does give you enough room to make me have 6 trays going instead of 4!

Yes the Ninja works great and you can dehydrate using the basket fryer with one layer in the basket and one underneath the basket! I wanted to buy the dehydrator racks for mine but in Canada the cost for that was the same as my new dehydrator! Not sure about US price but if you just wanted to try out a few chips it works great as it is!

I want to turn the chips into flour for recipes, I am very happy with my Panko pork rinds.
I've found a Xmas snack with pork rind pieces, dehydrated cheese etc like the boxed snacks (Karl the natural path keto guys wife Judy), I'm thinking smaller meat chips would work well too. Mixing in Saskatoon's with ground beef would make a nice treat too, like pemmican. I'm from Alberta but in Penticton there are a few Saskatoon bushes, I'm helping the environment by picking many of them before they make a mess of the paved walking trail along the creek😁
I had a Saskatoon bush at my last house, I kind of miss it! Your Christmas snack sounds good! I'll have to check out Karl and Judy, I do follow them but often miss things that come up!

I love carnivore chips, but Carnivore Crisps are too expensive and I don’t have room for a dehydrator in my apartment. 😢 I can fix chicken skins in the oven but it’s hard to get enough to make to satisfy me. It’s probably best. I would eat them all day long. 😔
You can do meat the same way you do chicken skins in the oven. Also, some grocery stores will sell you chicken skin, if you ask at the meat counter.
Ask your butcher! I bought 5 lbs organic skins from my butcher, he saved them up for me until he had 5 pounds.
Anita, I use mesh silicone liners on my stainless steel trays
. Without the liners everything sticks to it.

Have you tried making Meat Crisps out of Pepperoni (the ones you buy to put on pizza, already cut)... and Slamboni... already cut... makes great CRISPS.

Yes, I have done that in the past but I'm trying to severely limit processed meat. But it does work well for those can eat it!

Nice video. After your last video on the chips I looked in my area for this thin sliced meat and found none. I am interested to see if you can use that meat slicer. I have that meat slicer and i found it is "problematic" to get things thin, but it is still ok though (never tried raw meat). Looking on amazon, searching shabu, I found a guilotine style slicer. Was thinking about getting one of those. I have a dehydrator and make jerky in it, but not too often cause the kids eat it so fast I cant keep up... Good Luck!

you need to use meat with as little fat as possible when dehydrating meat slices, and can keep them in the freezer in a ziploc. Once you have your dried meat you can make pemmican if you want to experiment further (turn meat into powder and then melt some beef fat and mix to make pemmican balls)
also try dehydrating thin slices of liver for vitamin boost (use that meat slicer to cut them thin!)
So….eye of the round roast has no fat. Pemmican? Tell us more!

Mine worked even with the fat. What is the reason for not dehydrating with fat? I did do a lean pork loin yesterday that I had sliced with my meat slicer, those were good too and very little fat but I like the fatty crispy pieces too!
@@KetogenicWoman the fat gets bad for long term storage due to contact with air on many surfaces, and it never really dries up, so it technically should be sealed off... If you eat them in the same week its ok...
pemmican used to be sealed in skin pouches by natives in north america, and this made the meat + fat last forever.
I think the fat turns"rancid" (is this the right word in English....?)

@@KetogenicWoman we drive a semi, and only home weekends. I prep for our 5 days etc. been on weight stall for 4 weeks. Getting thyroid test in mail this week. So irritated when I eat no carbs, sweets etc. my TSH was 3.4 and my dumb doctor didn’t do all thyroid panel. Then of course he wants to put me on meds for high cholesterol . He is fired. Ok. I bought salami slices and made some for my hubby. He loves them! He's not on any diet but if I can make things he'll eat over junk, it's all good. I won't eat that because they put dextrose (sugar!) In everything. But I also bought some prosciutto which only has salt. I put them in my dehydrator and bam! 4 hours and they are yummy. Once I get a meat slicer, I will go to town! 😆 I want to buy a ribeye roast and slice it. It needs to be somewhat frozen but when you slice the meat, it doesn't have to be cooked first too, correct?
They do slice best when partially frozen. I dehydrate mine from a raw state but be sure to preheat your dehydrator and that the temp is over 160 for that to be safe. Or do them in the oven.
@@KetogenicWoman yes, my dehydrator has a setting for jerkey at 160. I was hoping that was the answer. So in a way we are eating it somewhat raw, kinda.

Ha! My entire kitchen is 24 sf….yes, 6 feet by 4 feet….so I hand my appliances inside the pantry door or on the outside of my pantry door, too. In the huge Costco shopping bags…using boxes to give the bags structure! There is always a place to hang a bag…. Back of bedroom door!

Yes! It works great, I've made these exact chips in my Ninja but you only get 2 tray surfaces (under the air fry basket is one tray and the basket is the second tray). But you can get the add on dehydrator racks, here in Canada that rack costs what I paid for the dehydrator so I went with that.

I had had the largest Excalibur for close to 10 years and it is great. Though I have not used it since I have been trying to stay of Keto or Carnivore. My hubby misses the chip thing. Have you had marinated in the coconut replacement for soy sauce?
