Yeah, just awful filleting technique all around. No reason to descale if you're just going to skin it. Dull knife and no skill with it, uses it like a hatchet to hack the filet off the frame. Just abysmally amateur, not what you want to see a "pro" doing to the fish you paid a lot of good money for.
