I first found your channel and advice last year. I canned some sauce for the first time but didn't use your method. 2 days ago I picked some of my better boys and canned them using your open kettle method. It worked so well (they sealed and popped within 5 minutes after the 5 minute upside down time). Today I went to an Amish farm and bought a half bushel. I decided I don't want to can sauce - I like the chunkier method you use and when I buy tomatoes I always buy whole canned or diced, and chop them up to have chunks in recipes - my favorite. I can't tell you how much I appreciate your instruction on this it is perfect for what I want! Thanks!

Simple. As long as the seal lasts. My Mother passed away on her 52nd birthday on 1/7/87. When we cleaned the cellar there were blackberries, peaches, green beans, etc back to 1970. They were perfect.
I think it’s a personal preference. Most of my family leaves them on. I have friends that remove their lids. You can easily see if a lid is unsealed. I had one last year. The jar actually had a small crack in it.
@@howitworksforme It may be a safety thing for you but for a lot of people it is not. I think jumping out of a good airplane is unsafe but those who parachute will disagree with me. Your personal preference on what is safe is just that. YOUR personal preference. Other than botulism, if your seal is popped, you'll know it. Unless you don't do an inspection of the jars you are opening and if you don't do that, rings on jars should be the least of your worries.

When water bath canning (ie.quarts at 50 minutes), can you start with a cold product. or do you still bring to a boil?

Hi. Bringing anything up to 185 deg Fahrenheit will render botulism non-toxic.

Acidic items only such as jams, jellies, marmalade, and tomatoes. Any that can be water bathed canned, I use open kettle.
The ph-meter is a great Idea. But please NEVER store your jars with the rings on. At least losen the rings.

@@useful.knowledge it is not personal preference, it is a safety thing. Not all bacteria, and not all botulism bacteria, produce big amounts of gas.
