Same here. I get almost stupid about making sure they are clean. Those storms are now in north Alabama tonight! The clover jelly is actually super easy compared to honeysuckle or dandelion jelly.
My Grandmothers always wiped the rims of the jar with a towel damp with vinegar and I do it most of the time but I have used a Star San and water solution.
I saw your video yesterday and I went out today and picked my clover flowers. They are currently steeping now. Is there better flavor depending on when the flowers are picked? It was late afternoon when I picked mine, but I wonder if early morning has more nectar. I am so excited to make them into jelly tomorrow. Thank you for sharing how you do this. I'm inspired!
Excellent question but I don’t think so because I’ve made two more batches since everyone loves it so much and haven’t noticed a taste difference. I even picked 3 cups about 8 pm and made jelly about midnight. Thanks for watching and all the best on the jelly!

I’ve always heard to wipe your rims with vinegar instead of water. Do you just use water? I wonder if it even matters. I’m going to start canning one of these days! Thanks!! I’m in Morgan county so we are not too far from each other. I’ve always just used water on the lids because the hot jelly is going to destroy any contaminants when you turn the jar upside down but that vinegar idea is a real good one. Just pick you something like a jelly you want to make and give it a try. You will get hooked on canning!
Hi. I won’t affect the flavor and most of it will be on the top of the jelly when you open the jar. You can just remove it then. Just a heads up that sometimes skim will look like mold after a few months but it’s obviously not mold.
