    Love this video and recipe! I accidentally smoked a turkey one thanksgiving. It was really cold out and our oven was out, so I took an old gas grill and loaded it with oak.....and then crossed my fingers while saying a little prayer. That was the most delicious turkey I have ever in my life cooked. Well, the oven is out again this year. To the smoker we go!!!

    Using my Green Egg, I put aluminum foil on the ceramic heat diverter and an aluminum pan under a metal rack I put the turkey on. Easy clean up!

    Was worried this would be too salty but you didn't mention that...
    Im about to do my first rotisserie chicken and debating on wet brine, dry brine and injection. I was surprised to see someone tried all 3!!!

      I've never had one turn out too salty. Don't let it sit in the brine too long, and it won't be salty.

      Most definitely. I've cooked many turkeys in the PBC and they always come out great.

    I find when I brine turkey it changes the texture
    However, it is a good trade off for how juicy it is.

      @@Armadillopepper usually brine about 12 hours. its not bad I can just tell the difference. The meat seems firmer.
