In some of the other ole hickory videos I noticed a heavy white smoke which is acrid and can make a bitter smoke flavor. Did you do anything different loading the charcoal basket ? I want to buy an ole hickory but was reticent and want to wait until I know I can get clean smoke
Hey Joe. My secret is to leave the door open until the charcoal or wood catches fire good. Afterwards its good to close the door. This is how I maintain good clean smoke. Hope this helps.
Are these precooked? First time making turkey legs weren’t sure I was supposed to get raw and brine, etc or pre smoked... how was the flavor with pre cooked and re smoked?
Lexii Gipson Hello Lexi, these were precooked turkey legs. The flavor whether pre cooked or raw will be enhanced by doing the brining method. It imparts so much moisture to the final product. The pre smoked is definitely good when you are trying to finish quickly. The raw is also delicious because you can hit them with whatever smoke wood you want to use to make it your own. Hey Alex. There are plenty of good seasonings you can purchase at the store. I would look for a Cajun seasoning like Tony Chacheres , Creole seasoning. It will do the trick. It's been about four years but is wasn't cheap. Definitely commercial grade and for me, it's paid for itself many times over for large catering events.
