- High Protein Buffalo Chicken Mac & Cheese!
This might be my new favourite recipe, so creamy & cheesy. The macros are incredible, packed with protein & so easy to make!
Macros per serving (2 servings total)
532 calories / 63g protein / 51g carbs / 9g fat
Ingredients
For the Cheese sauce
• 150g low fat cottage cheese (Brand: Aldi Emporium)
• 200g light cream cheese (Brand: Philadelphia Lightest)
• 30g Lower fat cheddar cheese
• 40ml low fat/skimmed milk
• 1 tsp garlic
• 75g Buffalo sauce (Brand: Frank’s Red Hot)
For the chicken
• 1 chicken breast cut into halves (approx 250g cooked shredded chicken)
• 1 tsp paprika
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp salt & pepper
• 1 tsp olive oil
For the pasta
• 110g uncooked macaroni pasta
• 1 tsp salt
• Boiling water
- Cook the chicken on medium heat 4 mins each side then shred it up with 2 forks
- Boil the pasta for 8 mins
- When combining everything in the pan make sure the heat is on low and mix everything together till well combined
Macros will vary based on brands and ingredients you use!
Serve while hot and ENJOY!
