why not rout/oscilate the hinge pocket deep enough so it sucks t he hinge deeper allowing you to close the door. never really bothered learned to use a plainer could u have done that without taking the door down or is it just safer your way.
You have to take it off, purely because you wouldnt be able to hit the entire bottom of the door because the nose of the planer would hit the floor before you get the whole door. Good thinking though, you wouldnt have to take it off, if the bottom was fine.
A block plane would get you pretty close to the floor, and you could finish the last few inches with a chisel. Or you could run the planer sideways against the grain.

How do you recover all the sawdust -wet vac?

Why didn’t you simply shim the hinges! What would you have done if it was a metal door?
I usually use a hinge puller on metal commercial doors it works well. Not usually a piece of trim in the way either on commercial doors
