    Thank you for this! A local bakery was giving away starter last week and I thought it would be fun to try sourdough baking. I put the starter in the fridge and started scouring the internet for advice - and after so many websites and videos all recommending complicated instructions and equipment, I was about ready to give up. After watching this video, I felt less intimidated by the whole process. I just fed my starter and made a delicious batch of pancakes. The reminder that we humans have been doing this for a long time without the fancy equipment was a good reminder that all that stuff is not required. 😊

    your patients with freya is epic.... songs about the endless love of mothers with full laps and arms should be sung by bards so people will always remember how often they didnt get tossed out into the snow as children when they were making a pain of themselves haha. 😂
    Also, the concrete nature of sourdough starter and dough is one of the big deterrents or me. I have a starter I love. I have neglected it for a couple of months in the fridge and it always bounces back like its just happy to be invited into the warmth of the kitchen again. I have even taken a batch and dehydrated it so I can share and always have some even if something was to happen to the fridge version. Someone told me that dehydrating it would kill off any unwanted bacteria making the starter stronger, and indeed it seemed to do just that. I get better rises out of it than before dehydrating and reconstituting. I have a half a quart jar with dehydrated starter in it, and only used maybe a quarter of a cup to start the new batch.

    I had sourdough starter in the fridge for a month. I've never use it lol! You inspired me to get it out and feed it. And we made pancakes! :)

      @@VenisonforDinner yes, I think it did. It didn't quite double, but there were lots of bubbles. Just need to gird my loins and actually try to make a loaf for the first time.

      Once you get used to the sourdough process it will be like second nature. Gluten free is the same. It's all about having the ingredients on hand.

    I have wrestled with using an electric griddle too. I love how you can do so much at once, but don't love the non stick coating.

    What is your advice on spacing little ones? You seem to be consistently spacing with three year gaps, does that work well for you? What do you recommend for someone who's intending to have a lot of kids.

      We didn't intentionally space the first three with 3 year gaps. I had miscarriages in between. We love the gaps as the older kids are so great at looking out for the younger ones and give a lot of love to them as well.

      @@VenisonforDinner Oh I'm terribly sorry for your losses, I have some experience with that myself. Thank you for your reply. I am the middle child with a fifteen year gap above me and a five year below me. The fifteen year gap made my older sister into more of an aunt figure in my life as she was married and moved out by the time I was three. The younger gap was lovely, we are best friends, but I don't think I want to space any further apart than five years. I'm thinking three years is perfect right now, but we'll see what happens. Best of luck to you with your impending move by the way.

    I watched your video after Ruth Ann Zimmerman said you made the best sourdough starter. I have had sourdough bread that I really didn't care for and since Ruth Ann said yours was the best I thought I would check it out. However, I need to know how to start the starter. Were you given the starter or did you make your own and if so, where do I go for instructions. Thanks!

      There are a lot of recipes online but the basic premise of starting with good fresh flour and water is standard. The main thing to remember is its going to take at least four days and you want to keep it on the counter in a warmish spot, covered with a piece of cotton or a lid sitting on top but not screwed down.
      Start with about 2 tablespoons flour and a bit less than that of water. Each day (approx 24 hours) you are going to stir in down and add flour equal to the amount of "starter" in your jar and a bit less than that of water. It should be a muffin batter consistency. You are aiming for seeing bubbles and your starter doubling. When you get more than 1/2 cup of "starter" you are best to discard extra so you are only "feeding up" a small amount. Once your "starter" doubles within 24 hours it is good to go.

      It’s about a four days process. It’s a matter of mixing flour and water and letting it ferment. I don’t have a video on it but you can easily find one online.
